How festive and enchanting are these holiday 'Red Velvet 'Santa' Cookies'?? :) Santa LIKES!! Don't you just love the vibrant colors? Seriously, this is how they colorful they look! Besides Santa and the adults, (ha!) the kids will be really excited to eat these! They are absolutely ADORABLE!
Do you know how Red Velvet cake came about?
Well, here's the scoop! During the food rationing of World War II, bakers would use beets to enhance the color of their cakes. Weird, but true!
And did you know 'Chocolate' is one of the main ingredients in red velvet desserts? Yum!!!
These cookies are made from a red velvet cake mix and honestly, they are so soft, chewy and they melt in your mouth. The chocolate from the cake mix really comes through and the red obviously screams 'SANTA!' & 'CHRISTMAS!'. 🙂 Exactly what we were going for!
One more very, very important thing Santa really likes...It's those white chocolate chips and the mini holiday M&M's in the cookies that really rock it out!

Red Velvet Santa {Cake Mix} Cookies!
Ingredients
- 1 15.25 oz box red velvet cake mix
- ⅓ cup Canola Vegetable or Coconut Oil
- 2 large Eggs
- 1 cup White Chocolate Chips
- 1 cup Mini Red and Green M&Ms
Instructions
- Preheat oven to 350 degrees and spray cookie sheet with non-stick spray.
- In a mixing bowl, combine cake mix, oil and eggs together using a rubber spatula until just combined. Add in chocolate chips. Dough will be stiff and sticky.
- Lightly spray a 1.5 – 2 tablespoon cookie scoop with cooking spray to help the dough release from the scoop. Scoop batter onto prepared baking sheets, about 2-3 inches apart.
- Bake 11-12 minutes. Cookies will look soft and not quite done, but let them cool on the baking sheet for 5 minutes so they can continue to bake.
- Remove to a cooling rack to cool completely.

Depending on how big you make them will determine how many but I think one tablespoon per cookie will yield 24 cookies.
