Santa's Red Velvet Cookies

How festive and enchanting are these holiday Santa Red Velvet Cookies? Santa LIKES!!  These red velvet cookies are rich in chocolate flavor and perfect for Christmas cookie exchanges and party fun!  So easy to make!  Literally you can make and bake these tasty cookies up in 20 minutes or less, using this cake mix shortcut!

Ingredients

  • 15.25 ounce box Red Velvet cake mix
  • 2 large eggs room temperature
  • ½ cup unsalted butter melted and slightly cooled, or canola/vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 cup white chocolate chips
  • 1 cup holiday m&m’s

Instructions

  • Preheat oven to 350°F and prepare two baking sheets with parchment paper. Set aside.
  • In a large bowl, combine cake mix, eggs, vanilla and melted butter together using a wooden spoon to stir until just combined. Add the white chocolate chips and m&ms and stir to combine.
  • Using a medium cookie scoop (about 2 tablespoons), portion dough onto prepared baking sheets a few inches apart to allow them to spread – no more than 6 cookies per sheet.
  • Top with a few additional chocolate chips and m&m’s for more fun and color!
  • Bake for 9-11 minutes or until the cookies have set (but have not yet started to brown).
  • Allow to cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.

Notes

Can make smaller or larger, just adjust time.
