Marshmallow rocky road bars are one of my all-time favorite combinations ever and I love it because it literally takes 5 minutes to make! Chocolate Rocky Road Candy Inspiration

This recipe was inspired by Chocolate Charlie!  Have you ever had Chocolate Charlie Candy?  It’s hands-down the best marshmallow candy around the holiday season.  I could absolutely eat it every day!  (They even add in a little coconut too. )

One of my best friends, Tonya and I exchange a box of  it each year as our Christmas gift to each other and we giggle about it.

It’s perfect!  That way, we can consume it together and savor and drool over the rich creamy chocolate, home-made fluffy marshmallows and salted roasted peanuts.  Well, we have to finish it off!  None leftover!  That’s the fun part!

If so, this 5 ingredient Chocolate Rocky Road Candy are right down your alley!  They have EVERYTHING!

It’s the addition of salted roasted peanuts that gives this rocky road candy just the right balance of sweet and salty, which is completely dangerous!  BTW….You don’t want to be alone with these!  I know this to be a fact!

If you don’t want the salty vibe, just sub the salted roasted peanuts with unsalted roasted peanuts, but to me, it’s what makes these so delectable when you gobble them down. 🙂

Ingredients You Need for Chocolate Rocky Road Candy

  • semi-sweet chocolate chips, bar or melts (can do a combination of milk and semi-sweet chocolate if desired) 
  • unsalted butter or could substitute with creamy peanut butter
  • sweetened condensed milk 
  • dry-roasted or salted cocktail peanuts
  • mini marshmallows – Use anywhere from 2 to 4 cups marshmallows in rocky road candy recipe. Just know, if you add more marshmallow, you will have less chocolate fudge around the marshmallows in the fudge.  If you love more fudge and less marshmallow, then go with 2 cups. If you want a happy medium, go for 3 cups.  Do not add over 4 cups, it’s too much when it comes to coating the chocolate fudge with the marshmallows/nuts, etc. 

Heavenly Chocolate Rocky Road Candy! {5 Ingredients!}How to Make Rocky Road Candy 

  1. Line a 9×9 inch pan (for extra thick bars) or 9×13 inch pan with wax or parchment paper and lightly spray with non-stick spray. 
  2. In a microwave-safe bowl, melt the chocolate and butter and stir it every 30 seconds until it’s completely melted. Stir it at every interval; otherwise you do not see if all the chocolate is melted and it should look like a fudgy ganache.
  3. Quickly, stir in sweetened condensed milk, followed by adding peanuts and marshmallows. Fold all together.
  4. Pour into prepared pan immediately and spread out evenly. Chill until firm about 2 hours.  
  5. Cut into squares and serve.

Rocky Road Tips

  • If you want more chocolate, decrease the marshmallows to your liking. (The original recipe used 2 cups chocolate chips and 2 cups marshmallows, with the rest of the ingredients as written, pictured above in photo gallery and in video below in recipe card.)  
  • About mini marshmallows – Use anywhere from 2 to 4 cups marshmallows in rocky road candy recipe. If you add more marshmallow, you will have less chocolate fudge around the marshmallows in the fudge.  If you love more fudge and less marshmallow, then go with 2 cups. If you want a happy medium, go for 3 cups.  Do not add over 4 cups, it’s too much when it comes to coating the chocolate fudge with the marshmallows/nuts, etc. 
  • By adding more marshmallow, you get thicker bars.
  • You can sprinkle some sea salt on top as an option, for more salty explosions.
  • The recipe calls for 3 cups of semi-sweet, but I like to substitute some milk chocolate sometimes.  I would say if you do add milk chocolate, it’s more of melting type chocolate, so as far as the ratio – imo having more semi-sweet chocolate than milk is a better option.
  • For thinner sized bars, use a 9×13 sized pan.  I would recommend using 2 cups of marshmallows for the thinner bars because when you’re spreading them out in the pan, it’s harder to spread them out nicely.
  • If you want the chocolate bars on top to be smooth, use more chocolate than marshmallow and nuts and get the fudge into the pan quickly.
  • This fudge quickly sets up very quickly once it’s all mixed up.

Storing Rocky Road Candy Fudge

  • Storing Rocky Road Candy Fudge is best kept in the fridge, but you can enjoy it at room temperature. Store it in an airtight container in the fridge for up to 3 weeks or at room temperature for 1-2 weeks.
  • You can freeze fudge for up to 2-3 months.  Just let thaw out in fridge or room temperature whenever you’re craving a piece!

One of my recipe bucket list items includes making some homemade marshmallows and even replicating this Chocolate Charlie. But for now, these 5 ingredient marshmallow rocky road bars recipe is the fast version and it’s absolutely delicious!

Ingredients
  

  • 2 ½ cups semi-sweet chocolate bar chips or melts (can do a combination of milk and semi-sweet chocolate if desired)
  • 2 tablespoons unsalted butter or peanut butter
  • 1 14 oz can sweetened condensed milk
  • 2 cups dry-roasted salted peanuts add a 1/2 more cup if you love more nutty crunch!
  • 2-4 cups mini marshmallows depending how much marshmallow you want. (Original recipe uses 2 cups, but I like a lot more marshmallow in the bars.)
  • Optional 1/2 cup sweetened shredded coconut add with peanuts/marshmallow

Instructions

  1. They will last longer in the fridge up to 1 week if you want to make these ahead of time. Can also store at room temperature for 3 – 4 days. Bring to room temperature when serving. Hope you enjoy Susan!! This is perfect for Christmas!

  9. I made this candy for one of my holiday parties and it was a hit! Everyone who tasted it asked where I got the recipe. This recipe was a quick one to make and it calls for very common ingredients! To change it up a bit, I used white baker’s chocolate for one batch, or I may consider using a different kind of nut (pecans or walnuts) in the recipe. Thank you for posting this recipe! It is a keeper!

  10. Oh no Claudia! I don’t know why, honestly, unless you over-heated the chocolate (Melt the chocolate under 50% power and check it every 20 seconds if melted. Stir it at every interval; otherwise you do not see if all the chocolate is melted) or waited too long to add the condensed milk or had water on a spoon you were using. I prefer to use a wooden spoon versus a metal spoon for making candy. Some candy mixtures need to be stirred while they’re still hot, and wooden spoons don’t absorb heat like metal spoons.
