What Are Mississippi Mud Brownies?

It’s no wonder I’m swooning!  Mississippi Mud Brownies are a delicious combination of chocolate brownies, easy, creamy chocolate frosting, and melted marshmallows!

However, in this recipe we added Oreos, because brownies and Oreos are so good together, but you can certainly leave them out.

Mississippi Mud Brownies

These Mississippi Mud Brownies are the moistest, fudgiest, marshmallow-topped brownies that will rock your world, with Oreos included for a crunchy cookie surprise inside!!

We used a box mix of Ghirardelli brownies, but you could use absolutely make these brownies with this Fudgy Chocolate Chunk Brownies recipe, if you want to make scratch brownies.  The marshmallows are added on top of the brownies for 2-3 minutes to let them soften up and melt before you add the homemade frosting.

Speaking of the frosting, is is just another component of this recipe that makes these brownies so amazing!  It’s easy to make on the stove-top and once it’s done, you just pour it on top of the marshmallows!

Because the frosting is hot, you have to let it cool so the frosting sets.  That’s the hardest part…waiting for everything to set, so you can cut into the brownies!  Then devour!

Pecans are usually added in the mix, but since my daughter isn’t a ‘nut’ fan, I left them, but if you’re an avid fan of nuts, by all means add them in!

How to Make Mississippi Mud Oreo Brownies

Oreo Brownies with Marshmallows

  1. Preheat the oven to 325°. Spray a 9×9 pan with cooking spray and set aside. Line with parchment paper for easy removal.
  2. Make Ghirardelli brownies according to box instructions.
  3. Pour some of the brownie mix into the pan and layer Oreo cookies on top.
  4. Add remainder of brownie mix on top of brownies. It’s ok if the Oreos aren’t completely covered.  Bake brownies according to box instructions or until 
  5. until the center of the cake springs back lightly when pressed on, or a toothpick comes out clean. 
  6. Immediately add the marshmallows over the top of the brownies and return to the oven. Bake for 2-3 minutes, just until the marshmallows are starting to puff and melt.
  7. Remove the brownies from the oven and set aside to make the frosting.

Mississippi Mud Frosting

  1. In a medium saucepan over medium heat, combine the butter, milk, and cocoa powder. Cook until simmering and simmer for 2-3 minutes, being sure to stir constantly.
  2. Remove from the heat and whisk in the vanilla and powdered sugar. You can use a hand mixer to get the frosting nice and smooth if you would like.
  3. Drizzle the warm frosting over the brownies and allow to chill in the fridge for 20-30 minutes before serving.

  • 12 oreo sandwich cookies
  • 2 cups mini marshmallows

Mississippi Mud Frosting

  • cup unsalted Butter
  • 4 Tablespoons milk
  • 2 Tablespoons unsweetened Cocoa Powder
  • 2 ¼ cups powdered sugar sifted
  • 1 teaspoon vanilla extract
  • 1 dash salt
  • cup chopped pecans or walnuts optional
