I love recipes that don’t take a lot of time, especially during the holidays, because it’s so crazy, busy and hectic, can you relate? Here's one you'll love and have fun enjoying! These classic graham crackers smothered in a rich, decadent chocolate and topped with delicious Andes Crème de Menthe candies and are made with little effort!
These decadent Andes Mint Covered Graham Crackers are the perfecta nostalgic treat for your holiday festivities. Just purchase graham crackers, a good quality chocolate to melt and some Andes candies and you're good to go! Andes Crème de Menthe delivers a smooth blend of mint and chocolate flavors and is popular post-meal treat.
The iconic, rectangular three-layered candy‚ green mint sandwiched between two thin cocoa-based layers‚ became instantly popular after its 1950 launch, and it has remained an American favorite ever since. The individually foil-wrapped, bite-sized pieces enhance any social gathering or event, yet remain equally popular as self-indulgent treats.
Of course, there are the Andes Crème de Menthe Baking Chips that I used, so you don't have to unwrap them each individually. Plus for each one you unwrap, you have to unwrap one to eat for yourself as well. That's the way it works around here. 🙂
As for the chocolate coating, you can determine if you want to use milk or dark chocolate or maybe even a combination of both. I used Ghiradelli's semi-sweet chocolate chips for these. The chocolate color matched the chocolate on the Andes mint candy really well. Add some sprinkles to give them the glee factor! 'Tis the season after all!
So Easy to Make - 3 Main Ingredients
- Prepare 1-2 baking sheets and line with parchment paper, set aside.
- Place chocolate chips or wafers in microwave-safe container.
- Microwave chocolate for 1 minute. Stir thoroughly (product keeps its original shape until stirred). If not completely melted, continue to microwave at 30 second intervals and stir until smooth. Add 1 - 2 teaspoons of canola or oil of choice to thin the chocolate if it's super thick. AND Overheating will cause chocolate to seize, so be mindful of that.
- Dip graham crackers one a time coating the graham cracker on both sides, using a fork and place on parchment paper.
- Add chopped Andes candies to top. Add some sprinkles for joy!
- Let sit at room temperature until set. To speed up process, place in fridge for 10-15 minutes.
So literally, 10 minutes later, you've produces some really lovely gourmet chocolate covered graham crackers! Courtesy of you!
I used whole graham crackers and split them in half, but you could make them even smaller by just snapping them at the seams where applicable.

Holy cow - these would be dangerous to keep in our house! I know I would eat the entire batch...and way too quickly. I saw those Andes baking chips in the grocery store the other day. Cool concept! But I have to say that covering graham crackers with chocolate might be the best idea ever. I'll have to make a batch with Robbie over the holidays! Pinning!
