    These Apple Crisp Cheesecake Bars are so dreamy with easy to prepare assembly instructions!  When I think of fall, these apple crisp bars loaded with cream cheese are definitely on my radar!

    These tantalizing dessert bars are a cross between creamy cheesecake and apple crisp together!  Wait until you bite into yummy layers of a super-simple homemade apple pie filling, cheesecake and a delicious cinnamon oatmeal crumble, both in the topping and bottom layer.

    Even add some caramel sauce on top for an extra indulgent treat!  Sure to be a crowd favorite like these 6 Apple Fall Baking Recipes and this Chunky Apple Walnut Cake!

    Who doesn't love cheesecake and apple crisp?  Putting them together is genius, if you ask me!  I cannot resist the temptation.  Can you?

    What Apples Should I Use?

    The key to a great apple dessert is to use a diverse variety of apples for a mix of textures and flavors: sweet, tart, crisp, and soft.  So any baking apples will work great for these apple crisp cheesecake bars!  Using apples like Granny Smith, Gala, Fuji, Honeycrisp, Pink Lady and Golden Delicious are excellent choices.

    You'll also want to slice the apples very thin, so they cook through while baking.  I love to use Granny Smith apples, because they are sweet, tart and amazing! Like in this Awesome Country Apple Fritter Bread!

    This apple cheesecake bar recipe has a few steps but it's totally worth it in the end!  So heavenly!

    Ingredients You Need

    Oat Crisp Crust & Topping

    • quick-cooking oats
    • all-purpose flour
    • brown sugar, packed
    • baking powder
    • baking soda
    • ground cinnamon
    • butter, melted

    Cream Cheese Layer

    • cream cheese, room temperature
    • granulated sugar
    • vanilla extract
    • eggs, room temperature

    Apple Pie Layer

    • 3 large Granny Smith apples, peeled, cored, and thinly sliced
    • all-purpose flour
    • brown sugar
    • ground cinnamon
    • Caramel topping, for garnish

    How To Make Apple Crisp Cream Cheese Bars

    1. Preheat oven to 350°. Line a 9 inch baking pan with parchment paper and lightly grease with non-stick cooking spray. 

    Oat Crisp Crust & Topping

    1. In a large bowl, toss together the oats, flour, brown sugar, baking powder, baking soda, and cinnamon.
    2. Add melted butter to mixture and using a fork, mix mixture together until it’s crumbly.
    3. Measure out 1 ¼ cups of the oat mixture to use for topping; set aside.
    4. Pour the remaining oat mixture into a greased 9 inch baking pan and press firmly to the bottom of the pan.
    5. Bake 15 minutes, or until a golden brown. Make cream cheese mixture while crust is baking.

    Cream Cheese Layer

    1. In a large bowl, add softened cream cheese, sugar, and vanilla and beat with mixer until smooth and creamy.
    2. With the mixer on low, add the eggs, one at a time, until fully incorporated.  Set aside.

    Apple Pie Layer

    1. In a large bowl, combine apples, flour, brown sugar, and cinnamon.

    How to Assemble Apple Crisp Cream Cheese Bars

    1. Scatter apples on top of the cooked crust.
    2. Spread cream cheese mixture over the top of the apples.
    3. Top cream cheese layer with oat mixture.
    4. Bake 35-45 minutes.
    5. Let cool completely, then refrigerate until ready to serve.
    6. To cut, easily remove the cheesecake bars from the pan by lifting out the parchment paper.
    7. Top with caramel topping when you are ready to serve if desired.

    How to Store Apple Crisp Cheesecake Bars

    These Apple Cheesecake Bars should be tightly covered and stored in the refrigerator once they have cooled.  They are good for about 3-5 days.

    Can I Make These Apple Crisp Cream Cheese Bars Ahead of Time?

    • Yes! You can completely assemble, bake and chill these cheesecake bars 24 hours in advance, or prep different elements of the recipe ahead of time if you wish, like the oat crumble and the cheesecake filling.  Both can be made 24 hours ahead of time and stored in individual airtight containers in the refrigerator until you're ready to assemble your bars.
    • Caramel can be drizzled on bars before they are stored in the fridge OR can the caramel can be heated in the microwave and drizzled over before serving.
