Why I Love These Healthy Raspberry Oatmeal Bars!

So many reasons, but I love how healthy and easy these bars are to make! Perfect for what you’re looking for in a healthy breakfast or snack bar treat!

  • Perfect bar recipe for when you want something quick to whip in 5 minutes!  The oven does the rest!
  • Easy to make!  You literally make the oatmeal mixture in one bowl, stir it with a wood spoon and layer it in an 8×8 pan with raspberry filling in between the layers.
  • The top and bottom oat layers are using the same oatmeal mixture, so this eliminates time and effort!
  • These sweet and fruity sugar-free raspberry bars satisfy my sweet tooth and aren’t loaded with sugar, but still taste amazing.  Made with healthy monk fruit sweetener with zero calories, thank you very much!
  • Raspberry jam or preserves works amazing in these bars.  I love using sugar free seedless raspberry preserves  because I’m not a fan of raspberry seeds most of the time. Raspberries are particularly powerful, rich in fiber and reduce intracellular damage within cells, which may help cells repair themselves, as well as stimulating the body’s processing of fats and sugars.

Raspberry Options

  • Use sugar-free, natural or your favorite raspberry jam or preserves in this bar recipe.  Seedless or with seeds, you can choose what texture you want these bars to have.
  • Substitute strawberry, blueberry, blackberry, cherry or peach with the raspberry jam/preserves so you can make these bars different each time with a different jam flavor. Yaasssss!!

Oat Options

  • Making oat flour is very simple! It requires just 1 ingredient, 1 blender, and 5 minutes. Simply add rolled oats to a blender and blend for about 15 seconds until you have a fine, powdery flour.
  • Don’t want to make oat flour?  You can substitute with 1 minute oats or quick oats easily, because they are thin and flaky-like!  You’ll just have a combination of old fashioned and quick oats in your bars.
  • You will need the combination of either oat flour &  old fashioned oats or quick oats & old fashioned oats.
  • Gluten Free Option! If you’re gluten free, by all means use gluten free oats to make these!

Fat Options:

  • We used unsalted butter in these bars, but if you love peanut butter, you could use 4 tablespoons peanut butter and 4 tablespoons butter as well!  Go for the peanut butter and jelly bars theme!
  • Don’t substitute the butter with oils like vegetable, canola or coconut oil with this recipe. I think the butter adds flavor that’s needed for these bars and the other oils won’t achieve that and will help stabilize the bars better so they don’t fall apart.

Ingredients You Need

  1. unsalted butter, melted
  2. vanilla extract 
  3. oats/oat flour – quick oats or oat flour or gluten free quick oats or oat flour if you want gluten free option
  4. old fashioned rolled oats – use gluten free old fashioned rolled oats or gluten free organic rolled oats for gluten free option
  5. healthy monk fruit sugar or sugar of choice
  6. cornstarch
  7. baking powder
  8. salt or sea salt
  9. seedless raspberry jam or preserves or jam/preserves of choice with sugar-free, natural options

How to Make Healthy Oatmeal Raspberry Bar Recipe

  1. Preheat oven to 375°F. Generously grease an 8 x 8-inch pan.
  2. In medium bowl, combine melted butter. oats/flour, sugar, cornstarch, baking powder, vanilla and salt until thoroughly blended.
  3. Press 1 cup of oat mixture firmly into bottom of the prepared pan. Spread raspberry jam evenly on top.
  4. Sprinkle remaining oat mixture over jam, then pat firmly to make top layer smooth and even.
  5. Bake 20-25 minutes or until top is lightly browned and firm. Cool bars in pan for 30 minutes on wire rack.
  6. Cut into 15-16 squares and serve at room temperature.

Make these Raspberry Oatmeal Bars Ahead!

  • Make ahead: To make these bars in advance, wrap them individually with plastic wrap once they have cooled and been cut. They can be stored in the refrigerator or freezer, depending on how long you want to keep them.

How to Store Raspberry Oatmeal Bars

    • Storing Room Temperature: Store bars in airtight container for about 3 days at room temperature, if they last that long!
    • Storing in Fridge: Place bars in an airtight container in the fridge. They will last for about 5 days.
    • Freeze: To keep them longer, place the container in the freezer and they will stay fresh for up to 3 months.
