This lemon pudding cake reminds me a lot of magic cakes because it involves the 2 major steps of making separating the eggs to make the cake.  Here you add the egg yolks in the beginnings of making the cake batter and then you whip up the egg whites to add to cake batter and then fold them together.  Then the baking science takes over in the oven to give it that magical pudding cake!

Ingredients You Need

Fluffy Lemon Pudding Cake Recipe

  • 2 tablespoons unsalted or unsalted butter, softened
  • 1 cup granulated sugar 
  • 3 large eggs, separated 
  • ¼ cup + 1 tablespoon all-purpose flour
  • 2 large lemons, zest the lemons and squeeze lemons for lemon juice
  • 1 cup almond milk or any milk of choice, could also use heavy cream, if desired.  (I love using unsweetened almond milk)
  • Options: powdered sugar for dusting on top, with whipped cream or ice cream and some seasonal berries on top would also be delish!

Instructions How to Make Fluffy Lemon Pudding Cake

  1. Preheat the oven to 350°F and spray an 8-inch or 5 quart baking dish with non-stick cooking spray. Set aside.
  2. In a bowl, mix the sugar and softened butter until it looks sandy using a rubber spatula or your finger tips when mixing.  Add the egg yolks and flour. Then whisk in the lemon zest, juice, and milk.
  3. In a separate bowl, beat the egg whites until stiff peaks form about 3-5 minutes. Gently fold the egg whites into the batter.  (Batter should be lumpy with the egg white mixture and the wet mixture – it should not be smooth. If you mix it too much, you won’t get the pudding and cake texture you’re looking for.)  Pour the mixture into the prepared baking dish.
  4. Bake the pudding for 40 minutes until it’s set and the top is golden. Eat it warm with powdered sugar sprinkled on top.  Can also serve with whipped cream or ice cream!  Super delish!

Storing Lemon Cake

Store any pudding cake leftovers in an airtight container and then warm it up in the microwave for a 20-30 seconds or eat it as is! It’s really good cold too!
