It's the ultimate spring and summer dessert you can you literally whip up in minutes! Serve right away, within the hour or just place in the fridge until you're ready to serve it up!
You will need a mixer for this dessert. It makes 4 individual servings. If you have more peeps to serve it to, double or triple the recipe for sure. See notes about pan sizes, if you're interested in using for a pie of layered dessert. Use the adjustable servings tab in the recipe to adjust servings needed. Top it off with some fresh berries or as is.
It's very pretty to use a pastry bag and star tip
to pipe the dessert into ramekins or cute glass cups for presentation purposes.
What is Lakanto?
The powdered sugar we used was Lakanto. It's the perfect sugar-free substitution for powdered sugar for all your frostings and cheesecakes.
I love using Lakanto’s Powdered Sugar. I talk about their line of products all the time, and if you are looking for any healthy sugars, (white, brown and powdered). If you don't care about the sugar-free option, use regular powdered sugar in place. It will taste amazing either way. I promise you!

I don't see why not? You could substitute lime or even orange for that matter! It's soo good!
Sheila says
Looks fantastic! Can limes also be used in place of lemons?
TIA!
Kim Lange says
Exactly! You can layer it with graham crackers or cookies or whatever you wish to give it some extra yumminess! Thank you Shauwan!!
Shauwan Daniels says
This is EASY and light! My non-keto eaters ask for this for dessert but put graham crackers at the bottom of their bowl.

I love all tart and zesty things, so this luscious dessert is right for me! Also, this got me thinking that it could easily be transformed into a trifle or Eton Mess, just with the addition of meringues and lemon curd.
