So, What Makes Coffee Cake Recipes So Delicious? 

In my opinion, it’s the streusel crumble on top!  Add a little vanilla glaze on top of the crumble and go all in!

Baked with butter, brown sugar, and cinnamon, these muffins are moist, fluffy, and guaranteed to impress.  Made with Greek yogurt with a cinnamon sugar layer in the middle and topped with the most delicious crumb topping, the best part!

I’ve always known coffee cake as a cake intended to be eaten while enjoying a cup of coffee, usually for breakfast or during a coffee break. They’re an excellent excuse for a visit and a conversation starter, like this Apple Butter Coffee Cake and these Apple Crumble Muffins!

Ironically, coffee cake itself does not contain any coffee. They are usually single-layer cakes made in square, rectangle or bundt-type pans.

Typically flavored with cinnamon, they have a crumb topping and/or a glaze drizzle on top that makes them super scrumptious!

Ingredients for Coffee Cake Muffins Recipe

Cinnamon Sugar Filling – Optional

Crumble on top

  • unsalted butter
  • brown sugar
  • granulated sugar
  • ground cinnamon
  • salt
  • all-purpose flour

Coffee Cake Muffin Batter

  • unsalted butter
  • large eggs
  • Greek yogurt or sour cream
  • granulated sugar
  • vanilla extract
  • all purpose flour
  • baking powder
  • baking soda
  • salt

How to Make Cinnamon Coffee Cake Muffins

  1. Preheat the oven to 350°F and line a muffin tin with liners. Very, very lightly spray with non-stick cooking spray, if desired.

Cinnamon Sugar Filling – Optional, if you want cinnamon layer inside muffins

  1. In a small bowl, mix together sugar, melted butter and cinnamon and set aside.

Crumble on top

  1. Mix together the sugars, cinnamon and salt in a medium bowl. Whisk in melted butter. Add flour and stir using a rubber spatula just until moist. Spread out mixture on parchment paper to dry until ready to use.

Coffee Cake Muffin Batter

  1. In a large mixing bowl, whisk together eggs and sugar. Add in melted butter, Greek yogurt and vanilla extract mixing until smooth.
  2. Add in flour, baking powder, baking soda, and salt. Mix until well combined.

Assembly

  1. Begin to assemble the batter inside the lined muffin tin by scooping about 2 tablespoons of muffin batter into each muffin cavity. I like to use a small scoop, works easily if you have one!
  2. Place a tablespoon of cinnamon sugar mixture on top of each, then top each with 1 to 2 tablespoons of muffin batter, filling the tin ¾ of the way to the top. (You get 12 if large muffins if you use all the batter. If you use less, you could get 16 – 18 muffins and bake them accordingly, by decreasing the timer 5-10 minutes.)
  3. Sprinkle muffins with crumb topping, using your fingertips to gently press the crumbs into the batter. Place into oven and bake for 15-17 minutes, or until a tester inserted in the center comes out clean.
  4. Allow muffins to cool down to room temperature in the pan prior to transferring them to a wire rack to glaze.
  5. Drizzle a little glaze over warm or cooled muffins.

Vanilla Glaze

  1. Mix together the powdered sugar and cream/milk together to get a smooth glaze. Drizzle on top if desired.
  2. Warm these up in the microwave and enjoy with your cup of coffee, milk or juice!

How to Store Muffins After Baking

Room temperature: Keeping muffins in an airtight container on your kitchen countertop is the best way to store muffins for up to four days.

Freezer: To freeze muffins, place them in a single layer in a freezer bag. Frozen muffins will keep for up to three months. To reheat your muffins, thaw them at room temperature or use a thaw setting on your microwave. You can also wrap each muffin in aluminum foil and heat it for ten minutes in an oven set to 350 degrees Fahrenheit.

Healthy Substitutions 

  • Vegan, you could try using non-dairy vegan butter, vegan yogurt and an egg substitute of your choice like 1 tablespoon flaxseed meal mixed with 2 – 2 1/2 tablespoons water (for 1 egg) or 1/4 cup applesauce (for 1 egg + an extra 1/2 tsp baking powder or a small banana (for 1 egg).
  • Gluten free,  Replace all purpose flour with a good gluten free all purpose flour.
  • Sugar-free Options,  Instead of brown sugar and/or cane sugar, you could try Lakanto monk fruit or something similar.
