This Apple Cinnamon Coffee Cake is a great option for breakfast, snacking and dessert any day of the week! Sounds good to me, does it sound good to you? Cup of coffee, coffee cake and a beautiful day. Ohhh...yea!
So, lately, I've been making a lot of sugar-free desserts and trying to find healthier ways to eat dessert, thus sugar-free right? But I haven't had a lot of luck finding something that tasted good without a weird after-taste.
You know what I mean, especially if you're diabetic or you need to watch your sugar in-take. You have to find other options, but you also don't want to sacrifice dessert either.
YIKES! Not an option here at this house...I'm not diabetic but if I was, this would pass the test with flying colors!
I made this with Lakanto Monkfruit Natural Sweetener Variety Pack, Classic & Golden Sweetener. I decided to try when I was researching a brown sugar sweetener to use. Plus, the Lakanto products I have used, have always been amazing and I love it that it's monk fruit!

I think the cake is better the next day, like a lot of breads and cakes do. Oh, and it's super yummy warmed up in the microwave for 20 seconds or so.

Apple Cinnamon Coffee Cake
Ingredients
Apple Cinnamon Coffee Cake
- 2 cups all-purpose flour
- 1 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup butter softened
- 1 ⅓ cup sugar or healthy sugar substitute of choice about ⅔ cup - I used Lankato’s)
- 3 large eggs
- 1 tablespoon vanilla extract
- 1 cup sour cream or plain Greek yogurt
Apple Nut Sugar Mixture
- ½ cup chopped walnuts & pecans, combined or whatever nuts you want
- 2 teaspoons ground cinnamon
- ½ cup sugar I used Lakanto’s healthy ¼ cup brown sugar ¼ cup sugar-combo
- 2 medium apples peeled and chopped thin
Simple Brown Sugar Glaze
- ⅔ cup packed light brown sugar or healthy sugar subsitute I used Lankato’s healthy brown sugar
- 2 tablespoons butter
- Optional: For glaze thickness - add 1 - 2 tablespoons confectioners’ sugar or healthy confectioners sugar substitute I used Swerve Confectioner’s Sugar
Instructions
Apple Cinnamon Coffee Cake
- Combine the flour, baking powder, baking soda and salt in a bowl, set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla.; add flour mixture to creamed mixture alternately with sour cream or Greek yogurt, beating well after each addition.
Apple Nut Sugar Mixture
- In a small bowl, combine the nuts, cinnamon and sugar.
- Spread half of the batter in a well-greased 10-in. tube pan with a removable bottom. Top with apple chunks; sprinkle with half of the nut mixture. Top with remaining batter, then with remaining nut mixture.
- Bake at 375° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 30 minutes. Carefully run a knife around edge of pan to loosen. Lift cake with removable bottom from pan. Cool completely. Before serving, carefully lift cake from pan bottom.
Simple Brown Sugar Glaze
- Combine butter and brown sugar in a microwavable bowl until melted, about 30 -45 seconds and add powdered sugar if you want a thicker glaze and whisk until smooth. Drizzle over coffee cake. (If glaze thickens, place in microwave for 15-20 seconds for drizzle consistency). Serve warm or at room temperature.
- I think it’s best warmed up in microwave to get the most out of flavors.

Very interested in making this gorgeous cake , but I am wondering if it can be frozen with the glaze or is that something that should be added after defrosting..
what kind of apples are you using as some varieties get really mushy when baked.
Lastly is it really necessary to use a tube pan, or is it because of the easy removable.

Yes you can freeze it, but I would add the glaze afterwards. I used Granny Smith, those are my fave, but you could use Honeycrisp, Braeburn, Mutsu, Winesap, or Pink Lady as well. You could use a different pan, but I like it because of the shape and yes, easily removable. Hope you enjoy!!
