Apple Cinnamon Coffee Cake – Keto | Sugar Free Option too!

This Apple Cinnamon Coffee Cake is a great option for breakfast, snacking and dessert.  Sounds good to me, does it sound good to you?

Cup of coffee, coffee cake and a beautiful day.  Ohhh…yea!

This lush, vanilla butter coffee cake has cinnamon-sugar baked inside and on top with bits of apple, pecans and walnuts in every slice…and if you wish, a buttery brown sugar glaze to take it that next step to heaven. 

So, lately, I’ve been making a lot of sugar-free desserts and trying to find healthier ways to eat dessert, thus sugar-free right?  But I haven’t had a lot of luck finding something that tasted good without a weird after-taste.

You know what I mean, especially if you’re diabetic or you need to watch your sugar in-take.  You have to find other options, but you also don’t want to sacrifice dessert either.  

YIKES!  Not an option here at this house…I’m not diabetic but if I was, this would pass the test.  I made this with Lakanto Monkfruit Natural Sweetener Variety Pack, Classic & Golden Sweetener.  I decided to try when I was researching a sweetner to use and saw good reviews.

Golden Lakanto is a brown sugar substitute and Classic White is a white sugar substitute  which the color and flavors come from different parts of the Monk Fruit. It tastes like sugar, has Zero net carbs, Zero calories and it’s a Zero glycemic Sweetener.  Keto, Diabetic, Candida, Paleo, Vegan, Low Carb, Low Sugar, NON-GMO, and All Natural too.

All I know is…it works in this cake and the glaze and I look forward to using it in other baking adventures. 

I think the cake is better the next day and it’s super yummy warmed up in the microwave for 20 seconds or so.

And if you want to use sugar and brown sugar, go for it and serve up this Apple Cinnamon Coffee Cake  everyone will enjoy anytime of the day.

Ingredients
 
 

Apple Cinnamon Coffee Cake

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter softened
  • 1 1/3 cup sugar or healthy sugar substitute of choice about ⅔ cup - I used Lankato’s)
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup sour cream or plain Greek yogurt

Apple Nut Sugar Mixture

  • 1/2 cup chopped walnuts & pecans, combined or whatever nuts you want
  • 2 teaspoons ground cinnamon
  • ½ cup sugar I used Lakanto’s healthy 1/4 cup brown sugar ¼ cup sugar-combo
  • 2 medium apples peeled and chopped thin

Simple Brown Sugar Glaze

  • 2/3 cup packed light brown sugar or healthy sugar subsitute I used Lankato’s healthy brown sugar
  • 2 tablespoons butter
  • Optional: For glaze thickness - add 1 - 2 tablespoons confectioners’ sugar or healthy confectioners sugar substitute I used Swerve Confectioner’s Sugar

Instructions
 

Apple Cinnamon Coffee Cake

  • Combine the flour, baking powder, baking soda and salt in a bowl, set aside.
  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in vanilla.; add flour mixture to creamed mixture alternately with sour cream or Greek yogurt, beating well after each addition.

Apple Nut Sugar Mixture

  • In a small bowl, combine the nuts, cinnamon and sugar.
  • Spread half of the batter in a well-greased 10-in. tube pan with a removable bottom. Top with apple chunks; sprinkle with half of the nut mixture. Top with remaining batter, then with remaining nut mixture.
  • Bake at 375° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 30 minutes. Carefully run a knife around edge of pan to loosen. Lift cake with removable bottom from pan. Cool completely. Before serving, carefully lift cake from pan bottom.

Simple Brown Sugar Glaze

  • Combine butter and brown sugar in a microwavable bowl until melted, about 30 -45 seconds and add powdered sugar if you want a thicker glaze and whisk until smooth. Drizzle over coffee cake. (If glaze thickens, place in microwave for 15-20 seconds for drizzle consistency). Serve warm or at room temperature.
  • I think it’s best warmed up in microwave to get the most out of flavors.

Notes

This does not include the sugar free calories option, but obviously using sugar-free options, it will be much lower on the carbs and sugar.
