These Pumpkin Chai Spiced Oatmeal Cookies are wonderful and hit the mark when you're craving super-moist, thick and chewy, hearty pumpkin oatmeal cookies!!
These cookies are baked with homemade chai spices, pumpkin puree, oatmeal, molasses, coffee extract, semi-sweet chocolate chips and tart cranberries, so look no further! Healthy too! Because everything with oatmeal is healthy, right? 😀
Except, being that they are healthy-ish, I'm not staying out of them like I planned. (neither will you...just warning you!)
Good God Gertie! Let's just cut through the chase. I'm a total cookie lover! So, if there's a cookie in the house, don't worry, (or maybe you should!) I'll find it and devour it, healthy or not. And these Hearty Pumpkin Chai Spiced Oatmeal Cookies were so good, I couldn't stop myself to stay out of these!
These pumpkin cookies are what I would call, very hearty breakfast cookies! They have ¼ cup of cookie dough per cookie! My favorite part is tasting the tart cranberries with all the sweetness of the chocolate and pumpkin and chai spices. It's like heaven!
My downfall with these cookies are, instead of eating just a cookie or two for breakfast, I had one after lunch. then one after dinner and then one or two-ish before bed.
And then the next day began and it was like the groundhog day movie, starting all over again. That is me with cookies around. Dangerous!
As for the oatmeal, I used Flahavan's Irish Oatmeal but you can use whatever quick or rolled oats you like, with the exception of minute oats. I loved using this oatmeal in Mimi’s Carrot Cake Oat Pecan Loaf, too, so I'm kind of partial.
In fact, for other variations, add in your favorite chip flavor to make your personal taste to your liking! Add in raisins or your favorite dried fruits and nuts too!
Ingredients You Need
Pumpkin Chai Oatmeal Cookies
- all-purpose flour
- baking soda
- quick oats or old fashioned rolled oats
- salt
Chai Spice Mix
Wet ingredients / Sugars
- unsalted butter, room temperature
- light brown sugar
- granulated sugar
- vanilla extract
- pumpkin puree
- molasses
- Nielsen Massey Coffee extract
or Vanilla extract
- semisweet chocolate chips
, I used Ghiradelli semi-sweet
- dried cranberries
How to Make Pumpkin Chai Spiced Cookies
- In a separate bowl, add the flour, oats, baking soda, salt, and pumpkin chai spices together and whisk, set aside.
- Using mixer, cream the butter, and sugars together, then add in the vanilla, pumpkin puree, molasses and mix well.
- Add in the dry flour/oat mixture to the wet mixture and mix until just combined.
- Fold in the chocolate chips and cranberries and set in the fridge for 10 minutes.
- Preheat oven to 350 degrees and place parchment paper onto large baking sheet or two.
- Using a ¼ cup scoop, put 6 cookies on each baking sheet and bake 15 - 16 minutes.
- Transfer cookies from oven when done and let set for 5 minutes before transferring to baking rack.
- Devour!
Cookie Tips
- Coffee Flavor - Using Nielsen Massey Coffee extract with the Pumpkin Chai spices and chocolate really takes them to another level! YUM! And since these are breakfast cookies, why not have some coffee flavor included right in the cookies!
- Oats - Using old-fashioned rolled oats will make them more chewier, I used quick oats, which makes them not as chewy as the rolled oats would be, but either one used would be delightful.
- Don't overbake cookies, so they stay moist and flavorful.
How to Make Chai Spice Mix
Chai Spice is not just for tea! Mix all these together and store with your other spices. This recipe makes about 3 tablespoons worth.
Double or triple recipe and also use chai spice mix in cookies, breads, pies, cakes and donuts! If you don't have all the ingredients you can easily customize with what you have on hand. You can also buy chai spice mix as well!
Measurements of Chai Spice
- 2 ½ teaspoons cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground cardamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground clove
- ¼ teaspoon ground coriander
Storing Chai Cookies
- Let the cookies cool after baking then store at room temperature for up to 3 days in airtight container.
- For longer storage, store in the fridge for up to 6 days in an airtight container.
- Freeze for up to 3 months in an airtight container.
These pumpkin oatmeal cookies are great for breakfast or when you want something healthy, but hearty and delicious at the same time with delicious goodies included!

- 1 teaspoon Nielsen Massey Coffee extract Vanilla can be substituted
- 1 ¼ cups semisweet chocolate chips I used Ghiradelli semi-sweet
- 1 cup dried cranberries

Oh man, I am tempted to jump into the kitchen and whip up a batch of these right now, they look so dang good!
