Hubba-Hubba! Calling all ‘Chocolaholic’ Brownie Cookie Addicts!
Do you like marshmallow gooey-ness in your chocolate chip brownie cookies? Say WHAT!???? What, you’ve never had these before??
If not, I’ve got a recipe here that will definitely satisfy that brownie, marshmallow and chocolate chip craving you’ve been having late at night or in the middle of the day, but didn’t have a recipe to make it. NOW…you do!
Loaded with gooey marshmallow, an abundance of chocolate chips and thick brownie cookies, makes these heavenly delights so chewy, moist and absolutely delicious.

For those who don’t like marshmallow that much, just leave it out and you’ll still have perfectly, awesome, thick brownie cookies minus the marshmallow. You can drizzle them with some chocolate if you want to add a little pizzazz!
Here’s the recipe for these addicting, yummy bad boys! Enjoy!
- 1/2 cup butter
- 1 cup 60% bittersweet dark chocolate chips or bar chopped fine
- 1 cup semisweet chocolate chips or bar chopped fine
- 1 & 2/3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 4 large eggs
- 1 & 1/2 cups granulated sugar
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup mini semi-sweet chocolate chips
- Extra jumbo I used Jumbo Marshmallows, or large marshmallows cut in slices to stuff or place on top.
- Optional: Candy Kiss on top
Preheat the oven to 350 degrees. Line cookie sheets with parchment paper.
Place butter, 1 cup of dark & 1 cup of semi-sweet chocolate chips in a bowl and microwave until melted, stirring occassionally. Let cool.
Combine the flour, baking powder and salt in a small bowl and set aside.
In a large bowl, using an electric mixer, mix eggs, sugar, and vanilla extract on medium high speed until light yellow.
Gradually add dry ingredients, beating until just combined on low speed.
Slowly pour chocolate/butter also on low speed and mix in, beating until smooth.
Pour and fold in the other cup of semi-sweet chocolate chips and the mini chocolate chips. Chill for 20 minutes.
For jumbo sized cookies, using large cookie scoop (2 Tablespoons) scoop 1 half scoop of dough into scoop, then smoosh a marshmallow slice into the dough. Scoop more dough on top of the marshmallow and place onto prepared baking sheets, 6 per baking sheet.
If you want the marshmallow on top of the cookie, 1 to 2 minutes before the cookies are done, add the marshmallow slice on top of the cookies. Afterwards, take cookies out of the oven and add the chocolate kiss on top.
Overall, bake these jumbo cookies for 15 to 17 minutes, removing from oven as soon as edges are set.
Leave cookies to set up on baking sheets, then transfer to wire racks to cool completely.
