
I have so many fond memories of enjoying hot chocolate growing up. We would take huge scoops of Nestle Quik and add it to our hot milk in our favorite mugs and it was so yummy! The best part was adding lots and lots of puffy marshmallows and letting them melt into the hot chocolate and not burn your tongue, while in the process of sipping! It sure hit the spot after all those chilly football and basketball games. Brrrrr!
Wish I would have had these 'Comfy Cozy' hot chocolate marshmallow cookie recipe to dunk in my hot chocolate back then!
Ingredients You Need
- unsalted butter
- granulated sugar
- brown sugar
- eggs
- vanilla extract
- all-purpose flour
- baking soda
- salt or sea salt
- milk chocolate chips
- hot chocolate mix
- mini marshmallow bits
How to Make Hot Chocolate Cookie Recipe with Marshmallows
- Preheat the oven to 350 and line a few trays with baking paper or spray with non-stick spray.
- In a metal bowl, place the butter inside the bowl and place in the preheating oven.
- Leave it just for a few minutes, until the butter starts to melt around the outside (approx ½ of the butter melted). Take out of oven to cool.
- Once the butter has cooled, add both sugars and beat with a mixer until light and fluffy.
- Add the vanilla and eggs, beating between each addition just until mixed.
- Add the flour, chocolate mix, baking soda and salt or sea salt and beat on a low speed, just until combined.
- Fold in the chocolate chips & mini marshmallows until just incorporated.
- Use an ice cream or cookie scoop (¼ cup for large, 1.5 tablespoons for medium) and drop the dough onto the prepared baking sheets, allowing room for spreading.
- Pat down cookies just a little and press additional chocolate chips & mini marshmallows on top of cookie dough if desired.
- Bake one tray of cookies at a time, for 10-12 minutes for large, 8-9 minutes for small. Don't over-bake and allow to cool on wire rack.
- Makes 1 dozen large or 2 dozen small cookies.
- Store cookies in air-tight container.
Hot chocolate or cocoa, or whatever you call it in your neck of the woods, are actually baked right in the cookies, along with some gooey marshmallow bits and milk chocolate chips

I modified my Soft-Batch Chocolate Chip Cookies recipe to come up with these cookies and they rock!! BTW...They DID NOT make it through the day. So you might want to make a double batch!
I have to tell you, these Hot Chocolate Marshmallow Cookies are incredibly delicious and delightfully holiday-ish! These would be so cute in mini-version too, don't you think?

"Comfy Cozy" Hot Chocolate & Marshmallow Cookies

I've never seen mini-marshmallow bits. I thought you just meant min-marshmallows so that might have been a big part of the problem. I definitely plan on giving them another try! Thanks for the response.

Jeanette, did you use the mini marshmallow bits or the soft mini marshmallows? I'm sorry, if I didn't specify clearly enough, but I used the mini marshmallow bits that you get with the cocoa mix or you can buy them separate as well. I always spray my parchment paper regardless, but if you use regular marshmallows, I would add them at the end, as you said. I've made these several times and they've always turned out well. With melty marshmallow, I would leave the cookies sit a bit because they will break up when you try to move them. I hope you give them another try though! 🙂

These cookies were delicious but they were the sorriest looking cookies I have ever made. I believe I followed your recipe and I use an oven thermometer to ensure the proper temp. I made the large cookies and got 1 dozen per batch (I made 4 batches) The first ones I checked at 9 min but ultimately baked them for 12 min. I let them cool a few minutes on the pan before moving them. They either fell apart when I moved them or the stuck to the cooking racks and broke up. Each successive batch was baked a little longer and cooled a little longer with the last baking for 17 min and cooling on the pan for 10 min. Some of the cookies even stuck to the parchment paper. It would have helped if the directions had said what to look for when the cookies are done since you cautioned about over baking. Like I said initially, the cookies were delicious and I expect to try again. Maybe chill the dough or leave the marshmallows out of the dough and only put them on top.
