  • Mix up the cookie dough with ½ cup softened coconut oil or butter and 1 egg until combined and then transfer to a baking pan.

Notes

Feel free to make your own homemade frosting using Lakanto Powdered Monkfruit Sweetener or try them plain.
I did not do a nutritional calorie facts on this based on the frosting, some people may use more than others would. But you can figure it out by the info in the post if you want to break it down.  We were just going for gluten-free and sugar-free/keto options.

  1. Oh man, these look SO good, Kim! The best part is I don’t have to feel guilty with the sugar-free ingredients, these are being pinned right now!

  2. Love sugar and gluten free bars! Honesty I have to check if these brands are available over here ! Greta idea anyway !!!!!!!!!! xo

  3. These bars look terrific! Indeed, I never would have thought they were made mostly from a package mixture, and that they’re low in calories and sugar. Because the texture (which you can clearly see in the first photo) is splendid – so rich, buttery, chewy and crumbly yet light.
