Want to make some super yummy homemade candy bars that and quick and super-easy to make?  These Peanutty Candy Bars are the way to go!  They are chewy and gooey peanut butter oatmeal bars topped with a mind-blowing chocolate butterscotch layer loaded with salted peanuts!  These will not last long.

I promise you that!   (Gluten-Free option if you have gluten-free quick oats.)

The balance of flavors is OH MY!  The chocolate and butterscotch chips melted with the salty peanuts are a nice play of yumminess on top of chewy oatmeal bars made with brown sugar, butter, corn syrup, vanilla, peanut butter and of course oats. All this going on is hard to resist!

These bars are the perfect snacks to pack in kid’s lunches, make for bake sales, potlucks, parties, gift to a friend, after school snacks, busy weekends, movie nights and the usual closet hoarding that we don’t talk about.

This recipe is from Taste of Home.  I didn’t change anything as far as the ingredients.  I saw where some of the readers changed the ratio of the chocolate and butterscotch chips, but I really liked it the way it was written, but feel free to venture out there and do your own modifications as you see fit.

Other Options:

If corn syrup is not your thing, I haven’t tried it, but I think honey or maple syrup might work good in these as a substitute, but the flavor will change and possibly the texture.  If anyone tries it, let us know!

As far as gluten free, use gluten-free oats.

How to Make Peanutty Candy Bars

  1. Preheat oven to 375°.  Grease or line 9×13 pan with parchment paper, set aside.  
  2. In a large bowl, mix together the oats, brown sugar, melted butter, 1/2 cup peanut butter, corn syrup and vanilla.
  3. Press oatmeal mixture into 9×13 baking pan.
  4. Bake at  for 12-14 minutes or until mixture is bubbly around the edges.
  5. Using microwave, melt butterscotch and chocolate chips in microwavable bowl stirring every 30 seconds until the mixture is melted and smooth.
  6. Stir in peanuts and 2/3 cup peanut butter and mix well.  Spread over the oat mixture.
  7. Cool for 10 minutes; chill until set.
  8. Cut into large or small candy bar sizes.  Addictive!

Ingredients
  

Peanut Butter Oatmeal Layer

  • 4 cups quick-cooking oats Gluten-Free option if you have gluten-free quick oats
  • 1 cup packed brown sugar
  • cup unsalted butter melted (can use salted butter if desired)
  • ½ cup peanut butter
  • ½ cup light corn syrup
  • 1 teaspoon vanilla extract

Luscious Chocolate Candy Peanut Layer

  • 1 package butterscotch chips (11 ounces)
  • 1 cup semisweet chocolate chips
  • cup peanut butter
  • 1 cup salted peanuts

Instructions
 

  • Preheat oven to 375°.  Grease or line 9x13 pan with parchment paper, set aside.

Notes

For smaller batch of bars, cut recipe in half & use an 8x8 inch baking pan.
