Peanutty Candy Bars

Want to make some super yummy homemade candy bars that and quick and super-easy to make?  These Peanutty Candy Bars are the way to go!  They are chewy and gooey peanut butter oatmeal bars topped with a mind-blowing chocolate butterscotch layer loaded with salted peanuts!  These will not last long.  I promise you that!

Ingredients

Peanut Butter Oatmeal Layer

  • 4 cups quick-cooking oats Gluten-Free option if you have gluten-free quick oats
  • 1 cup packed brown sugar
  • cup unsalted butter melted (can use salted butter if desired)
  • ½ cup peanut butter
  • ½ cup light corn syrup
  • 1 teaspoon vanilla extract

Luscious Chocolate Candy Peanut Layer

  • 1 package butterscotch chips (11 ounces)
  • 1 cup semisweet chocolate chips
  • cup peanut butter
  • 1 cup salted peanuts

Instructions

  • Preheat oven to 375°.  Grease or line 9x13 pan with parchment paper, set aside. 

Peanut Butter Oatmeal Layer

  • In a large bowl, mix together the oats, brown sugar, melted butter, 1/2 cup peanut butter, corn syrup and vanilla.
  • Press oatmeal mixture into 9x13 baking pan. Bake at  for 12-14 minutes or until mixture is bubbly around the edges.

Luscious Chocolate Candy Peanut Layer

  • Using microwave, melt butterscotch and chocolate chips in microwavable bowl stirring every 30 seconds until the mixture is melted and smooth.
  • Stir in peanuts and 2/3 cup peanut butter and mix well.  Spread over the oat mixture.
  • Cool for 10 minutes, then chill until set.
  • Cut into large or small candy bar sizes.  Addictive!

Notes

For smaller batch of bars, cut recipe in half & use an 8x8 inch baking pan.
