So the story goes, in a small town in Idaho, a lunch lady made these brownies so perfect & delish, that they were entered in local bake sales and fundraisers with rave reviews! It's no wonder, they disappear so quickly. They are a chocolate lover's dream come true!
All you need is a few basic pantry staples and a few minutes of prep to make this lunch lady brownie recipe easily! One-bowl brownies and one bowl for milk chocolate frosting and BOOM! You have a super delish party treat that may require you coming back for seconds or thirds, right? ha! Lunch Lady Peanut Butter Bars are wonderful when you're craving peanut butter and chocolate!
Ingredients You Need
Lunch Lady Brownie Recipe
- butter, melted
- unsweetened cocoa powder
- all-purpose flour
- granulated sugar
- large eggs, lightly beaten
- vanilla extract
Milk Chocolate Frosting
- butter, softened
- milk of choice
- unsweetened cocoa powder
- confectioners' sugar
- vanilla extract
How to Make Lunch Lady Brownies
Lunch Lady Brownie Recipe
- Preheat oven to 350 degrees and line a 9x13-inch baking pan
with foil or parchment paper. Spray with non-stick cooking spray.
- In a large bowl, whisk
melted butter and cocoa powder together until smooth.
- Add remaining brownie ingredients and stir until evenly combined.
- Pour batter into prepared pan and bake 25 to 30 minutes.
- Let brownies cool 15 minutes and then frost.
Milk Chocolate Frosting
- Use an electric mixer to beat together all frosting ingredients until smooth. Spread frosting on brownies about 15 to 20 minutes after brownies have been pulled out of the oven. If the frosting melts some, that's ok, it will firm up as it cools.
- Once brownies have set and cooled, cut brownies and serve.
Toppings
Add your favorite toppings on top of the brownies, if you want to dress them up! I added sprinkles, mini m&m's and some Andes mint candies on each of the brownies after I cut them and gently pressed them down into the frosting. If you want to add them before that, it's fine, just make sure the frosting isn't too warm, when you add them so they don't melt into the frosting.
