Cosmic Brownies will never go out of style, because we love this delish copycat cosmic brownie recipe that brings us back to Little Debbie Cosmic Brownies!  Seriously easy to make brownies, so there’s no worry that you can’t make these in a jif for any occasion, when you’re craving brownies with a fun twist!

No mixer needed and are basically a one bowl brownies and one bowl frosting that are super simple to make.  Kids can help!  These brownies are right down their alley because they are so fun and colorful!

How to Make Homemade Cosmic Brownies

For the Brownies

  1. Preheat oven to 350 degrees F. Line a 9×9 inch pan with foil or parchment paper. Spray with non stick cooking spray.
  2. In a large bowl, melt butter in the microwave for 1-2 minutes.
  3. Using whisk, whisk in brown sugar, granulated sugar, eggs, milk, and vanilla into the melted butter. 
  4. Whisk cocoa powder and flour in a separate bowl, then add to wet mixture until smooth.
  5. Spread batter in prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.

For the Ganache

  1. Heat the cream in a small saucepan over medium heat until it begins to gently simmer. Do not let it come to a rapid boil– that’s too hot! Can also microwave cream with same results.
  2. Add chocolate chips. Stir occasionally until smooth.
  3. Pour ganache over brownies. Smooth with an offset spatula.
  4. Sprinkle with candy coated chocolate chips or mini M&Ms. 
  5. Refrigerate brownies until the ganache has set.

  1. Refrigerator: Store in the fridge in an air-tight container for up to 5 days. 
  2. Freezer:  You can freeze these copycat cosmic brownies in a freezer baggie for up to 3 months. Simply thaw at room temperature for 2-3 hours in the fridge until you’re ready to indulge!

Tips for Copycat Cosmic Brownies

  1. When measuring flour, make sure you’re not scooping up packed flour, when you are measuring.  You should fluff it up with a spoon or fork before you measure it. Second, spoon the flour into the measuring cup. Gently pile it in until it forms a heap above the rim of the measuring cup.  Scrape off the excess with a straight edge by using the handle of a spoon or knife.
  2. Do not overmix brownies! Mix until the dry ingredients are just combined, for the moist delicious brownie texture.
  3. Bake Copycat Cosmic Brownies in a pan lined with foil or parchment paper for easy removal out of baking pan.
  4. Cut brownies after the frosting has set in the fridge to get nice clean brownie slices for serving.  They cut much better while the brownies are cold.  Simply lift the brownies out of the pan by pulling the foil or parchment paper overhang and place brownies on a cutting board to slice your brownies easily.
  5. To tell if brownies are done, insert a toothpick in the center. If the toothpick comes out with a few crumbs, your brownies are done. If you still see batter on the toothpick, bake for 2-3 more minutes at a time.

Cosmic Brownies

  • ¾ cup unsalted butter 1 ½ sticks, melted

  • 2 tablespoons milk of choice
  • 2 teaspoons vanilla extract

  • 1 ½ cups semi-sweet chocolate chips
  • ½ cup heavy cream
  • 1 cup rainbow candy coated chocolate chips or mini M&M Minis
