Ingredients

Lunch Lady Brownies

  • 1 cup butter melted
  • ½ cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 4 large eggs lightly beaten
  • 1 tablespoon vanilla extract

Milk Chocolate Frosting

  • ¼ cup butter softened
  • ¼ cup milk of choice
  • ¼ cup unsweetened cocoa powder
  • 3 cups confectioners' sugar
  • 1 teaspoon vanilla extract

Instructions

Lunch Lady Brownies

  • Preheat oven to 350 degrees and line a 9x13-inch baking pan with foil or parchment paper. Spray with non-stick cooking spray.
  • In a large bowl, whisk melted butter and cocoa powder together until smooth.
  • Add remaining brownie ingredients and stir until evenly combined.
  • Pour batter into prepared pan and bake 25 to 30 minutes.
  • Let brownies cool 15 minutes and then frost.

Milk Chocolate Frosting

  • Use an electric mixer to beat together all frosting ingredients until smooth. Spread frosting on brownies about 15 to 20 minutes after brownies have been pulled out of the oven. If the frosting melts some, that's ok, it will firm up as it cools.
  • Once brownies have set and cooled, cut brownies and serve.

Notes

Add your favorite toppings on top of the brownies, if you want to dress them up!
  • I added sprinkles, mini m&m's and some Andes mint candies on each of the brownies after I cut them and gently pressed them down into the frosting.
  • If you want to add them before that, it's fine, just make sure the frosting isn't too warm, when you add them so they don't melt into the frosting.
