These healthy peanut butter monster cookies are such a great choice snack. With a few simple steps, you'll have a healthier version of a traditional cookie that satisfies all your cravings and you can modify them to your liking using gluten free oats instead of regular oats as well as changing out any of the add-ins with your favorites! Ingredients You Need
- creamy or crunchy peanut butter
- butter or applesauce
- brown sugar
- eggs
- vanilla extract
- quick-cooking oats
or {GF} quick-cooking oats can also use old-fashioned, or ½ & ½ quick and old-fashioned oats, depending on texture you like. Add up to ¼ extra oats for thicker cookies!
- baking soda
- baking powder
- pinch of salt
- semisweet chocolate chips
- M&M's
- ½ cup additional add-ins like nuts, candies, raisins, etc. (I used more M&M's and chocolate chips.
How to Make Flourless Peanut Butter Monster Cookies
- Preheat oven to 350°.
- In a large bowl, cream peanut butter, butter and sugars until well blended and smooth and then beat in eggs and vanilla.
- Add in the baking soda, baking powder, oats and salt and mix together. Will be on the runny side.
- Stir in chocolate chips, m&ms and whatever add-ins you want.
- Use a large cookie - ¼ cup scoop or drop by heaping tablespoonfuls 6 large cookies per baking sheet lining with parchment paper.
- Bake 12-14 minutes or until edges are browned. Let sit on baking sheets for 5 minutes before removing. Remove from pans with spatula to wire racks to cool. Store in airtight containers.
- These healthy monster cookies freeze well too!
Other Cookie Sizes
These flourless monster cookies are made (¼ cup) jumbo size, but you can make them whatever size your little heart desires. But whatever size cookies you decide on, bring out that big glass of milk and enjoy these super, delicious and easy cookies right from the oven warm!
For smaller cookies, reduce time to 8-10 minutes, medium cookies bake 10-12 minutes and large cookies bake 12-14 minutes.

Flourless Jumbo Peanut Butter Monster Cookies
Ingredients

- ⅔ cup packed brown sugar or use your favorite healthy sweetener
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 & ⅓ cups quick-cooking oats or {GF} quick-cooking oats can also use old-fashioned, or ½ & ½ quick and old-fashioned oats, depending on texture you like. Add up to ¼ extra oats for thicker cookies! Use gluten free oats for healthy gluten free option
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 generous pinch of salt add ½ teaspoon if you want more salty flavor
- ½ cup semisweet chocolate chips
- ½ cup M&M's or reese's pieces
- ½ cup additional add-ins like nuts, candies, raisins, etc. (I used more M&M's and chocolate chips.
