You should give these easy delish Flourless Peanut Butter Monster Cookies a try then! These can be made healthy or semi-healthy, depending what ingredients you decide to add into your own modified version.
Hard to believe these are made without flour and how tasty they are. I'm an oatmeal fan, so these are right down my alley, especially when the cookies include peanut butter
, chocolate chips
& M&Ms

Ingredients You Need
- ¾ cup creamy or crunchy peanut butter
- ¼ cup butter or ¼ cup applesauce, softened
- ⅔ cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 & ⅓ cups quick-cooking oats or {GF} quick-cooking oats can also use old-fashioned, or ½ & ½ quick and old-fashioned oats, depending on texture you like. Add up to ¼ extra oats for thicker cookies!
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 1 generous pinch of salt
- ½ cup semisweet chocolate chips
- ½ cup M&M's
- ½ cup additional add-ins like nuts, candies, raisins, etc. (I used more M&M's and chocolate chips.
How to Make Flourless Peanut Butter Monster Cookies
- Preheat oven to 350°.
- In a large bowl, cream peanut butter, butter and sugars until well blended and smooth and then beat in eggs and vanilla.
- Add in the baking soda, baking powder, oats and salt and mix together. Will be on the runny side.
- Stir in chocolate chips, m&ms and whatever add-ins you want.
- Use a large cookie - ¼ cup scoop or drop by heaping tablespoonfuls 6 large cookies per baking sheet lining with parchment paper.
- Bake 12-14 minutes or until edges are browned. Let sit on baking sheets for 5 minutes before removing. Remove from pans with spatula to wire racks to cool. Store in airtight containers.
- These freeze well too!
Other Cookie Sizes
These flourless monster cookies are jumbo size, but you can make them whatever size your little heart desires. But whatever size cookies you decide on, bring out that big glass of milk and enjoy these super, delicious and easy cookies right from the oven warm!
For smaller cookies, reduce time to 8-10 minutes, medium cookies bake 10-12 minutes and large cookies bake 12-14 minutes.
So many good things going on with these cookies, you won't be able to resist how chewy, moist and thick they are. Seconds (or thirds) are permitted. Great for snackin, lots of fiber, protein and super yummy!
