Ultimate Dark Chocolate Chip Toffee Walnut Cookies

Woot! Woot! It's almost the weekend and I can't think of a better way to celebrate the weekend, than with these  Chocolate Chip Toffee Walnut Cookies.

    *Cheers* to the freakin' weekend!

Ultimate Dark Chocolate Chip Toffee Walnut Cookies

Now, here's my tall fish tale when it comes to these sweet treats.

You see, I was reeled in, like a poor fish on a hook with those ultra dark chocolate chips , crunchy toffee and walnut chunks stuffed about in those thick, chewy, delicious cookies staring right back at me.  It's not like I was fighting the urge to bite them. I fell for them, hook, line and sinker. Obviously.  That's my quirky little fish tale!  🙂

I'm such a sucker for dark chocolate!!  (well...any chocolate really, but dark chocolate is just a different, cool kind of chocolate all in it's own special little world because it's not as sweet.  I named it the 'rebellious' chocolate.)  Although milk chocolate is  my favorite chocolate, dark chocolate does have it's advantages!

The anti-oxidants from the dark chocolate and omega-3s from the walnuts is in there.  That works for me!

    Ingredients You Need

    • all-purpose flour
    • baking soda
    • salt
    • unsalted butter, at room temperature
    • brown sugar
    • granulated sugar
    • pure vanilla extract or maple syrup
    • eggs, at room temperature
    • Ghirardelli 60% Dark Chocolate Chips
    • walnuts
    • Heath toffee bits

How To Make Ultimate Dark Chocolate Chip Walnut Cookies

    1. Preheat oven to 375 degrees and line baking sheets with parchment paper for the baking to begin!
    2. In a medium-sized bowl, whisk together the flour, baking soda and salt and set aside.
    3. Using a mixer, In a large bowl combine the butter, sugars, and vanilla or maple syrup and beat until light and fluffy.
    4. Add the eggs and beat until they’re just combined and let rest for 5 minutes.
    5. Beat the eggs for another 30 seconds with mixer.
    6. Using a wooden spoon, gently fold in the flour mixture stirring only until the flour begins to disappear.
    7. Fold in the dark chocolate chips and walnuts.
    8. Using a large scoop (¼ cup), scoop out over sized balls of dough and then pat between both hands making them rounder balls.
    9. Then place dough balls on prepared sheet, 6 per baking sheet.
    10. Bake for 11-14 minutes, or until golden at the edges but still soft in the middle.
    11. Let cookies cool for 5 minutes on the sheet before transferring to a wire wrack to cool.

Hi Kim, You are after my own heart. I love dark chocolate, but as you say all chocolate. Can't wait to try some of your recipes. Dark Chocolate Chip Toffee Walnut Cookies look so good. I have a part time job on Saturday's. I usually take goodies on that day. Some of the people I work with do not like chocolate. Too bad! I think I will make this recipe for my job on Saturday. Thanks for your recipes, especially chocolate.

Just made these but made some changes according to my pantry. Used pecan nuts and caramel chips. They have turned out really well and will become a regular on my cookie baking list. Thanks for a great recipe.

Hi Natalie! I used a large ice cream scooper or 1/4 cup, so it makes 16-18 large cookies. 🙂 You will love them and thanks so much for stopping by!
