Life is a bowl of cherries, especially with these soft and chewy Cherry Chip Cookies!  These cherry chip cookies are so scrumptious and taste like sugar cookies filled with tiny bits of maraschino cherries and frosted with a simple homemade maraschino cherry glaze!

Pretty please, serve me up with a cherry on top!  An amazing treat!

We used Betty Crocker's super moist cherry chip cake mix as a shortcut to make the cookies without much time or effort by using only 2 ingredients, besides the cake mix!  Oil and eggs.  That's it!

As far as the frosting, it is made with 4 pretty simple ingredients: maraschino cherries, heavy cream, confectioner's sugar and a dash of salt.  This is delicious cherry frosting!

    Ingredients You Need

    Cherry Chip Sugar Cookies

    • Betty Crocker's super moist cherry chip cake mix
    • canola or vegetable oil
    • eggs

    Cherry Frosting Glaze

    • maraschino cherries
    • maraschino cherry juice
    • confectioners sugar
    • salt
    • heavy cream or milk of choice

How to Make Cake Mix Cookie Recipe

    Cherry Chip Cookies:

First, set the oven to 350 degrees. Use parchment paper to line a baking sheet, set aside.

Secondly, add the cherry chip cake mix eggs, oil, and vanilla into a large mixing bowl, and combine with a fork or mixer.

Using a cookie scoop, create dough balls of the cookie dough and arrange on to the prepared baking pan, about 2-inches apart.

For scoops sizes small, medium or large will depend on how long to bake cookies.

    • 1 tablespoon cookies: 8-10 minutes
    • 2 tablespoon cookies: 10-12 minutes
    • ¼ cup or large cookie scoop cookies: 14-16 minutes

Next, place the cookies into the oven according to cookie sizes above, or until they just begin to turn a light brown. Make sure not to overbake.

Finally, take the cookies out of the oven and allow them to cool on the baking sheet, while you make the glaze.

    Cherry Chip Glaze:

To start, add the cherries and  juice into a food processor or blender and blend the strawberries to a puree, or leave larger chunks.

Next, combine the cherry mixture and powdered sugar until smooth. And, if the glaze is too thin, you can add a bit more of the powdered sugar, and if it’s too thick, just add more juice or water.

Transfer the cookies to a wire rack and top with the cherry glaze.

    How to Store Cherry Cookies

To refrigerate or room temperature, store cookies in an airtight container will keep them moist and fresh for 3 days at room temperature, longer if stored in the fridge.

Freezing Cookie Dough Raw and Baked

To freeze the cookies after they have been baked, let them cool completely. Place the cooled cookies on a parchment paper-lined baking sheet and place them in the freezer for 1-2 hours. Remove from the freezer and store in a freezer-safe container for 3-4 weeks.

To freeze the dough, place the balls of dough onto a baking sheet lined with parchment paper. Place the baking sheet in the freezer for 1-2 hours, or until the dough balls are completely frozen. Once frozen, transfer the dough to freezer-safe zipper bags. When ready to bake, simply bake as many of the cookies as you need from frozen. You may need to increase the baking time by 1-2 minutes.

These Cherry Chip Cookies are so fun and delightful and have just the right amount of cherry flavor!

The beautiful pink colored frosting with those cherry bits is incredible! Perfect for the 4th of July, Mother's Day, Father's Day, Valentine's Day and Christmas for sure!  Just an easy cookie batch you can whip up easily and devour!  The kids will love!!
