Strawberry-Raspberry Jell-O Whipped Cheesecake Layered Salad is fruity, creamy and so refreshing. Summer-inspired for your taste-buds! Oh yeah!
I think Grandma MacCarty was onto something with this retro Jell-O salad from way back when. Have you heard of Strawberry Jell-O Layered Sour Cream Salad? Well, when she made it, she put a different spin on it and I'm so glad she did.
The original recipe has 2 firm layers of strawberry Jell-O, mashed bananas, strawberries, pineapple and walnuts mixed all together and has a sour cream middle layer with a little sugar to sweeten it up.
But the updated version of THIS old-school jello cheesecake salad recipe has 2 firm layers of strawberry and raspberry Jell-O mixed, macerated strawberries, raspberries, mashed bananas and crushed pineapple layered with whipped cream cheese in the middle. Yup...I think THIS sounds wayyyy better!
I guess I should probably tell you now. If you're wondering who Grandma MacCarthy is, it's not my grandma, but one of my readers, Doug's grandma. 🙂
He has such fond memories of her and this Strawberry-Raspberry Jell-O Whipped Cheesecake Layered Salad and this Fluffy Angel Food Cake Delight with Fresh Berries, which initially sparked the inspiration for this Jell-O salad.
Grandma MacCarthy would make her angel food cake by mixing strawberries and raspberries with whip cream between the cake layers and then frost it. Sounds pretty yummy for a layered jello cream cheese!
You should really take this lovely jello cheesecake salad dessert to your next potluck or family reunion. It's an easy, beautiful layered jello cream cheese dessert to make and assemble and it layers and cuts nicely for serving. I used a large pizza cutter...worked like a charm!
Thank you Doug and Grandma!! What desserts do you remember your Grandma making?

That does sound amazing! I'll have to try that. 🙂 Try it with raspberries, so yummy!

I've only had this with strawberries - and that is amazing so raspberries would be wonderful. another way I've made this is to leave off the pretzel layer - put the jello on the bottom and top it with the cream cheese layer - very pretty in a glass bowl.

Hi Roxanne, I think it would be fine not adding it in. It's basically just fruit in jello. You could add more strawberries and raspberries if you wanted to though. Hope you enjoy!! xo

Hi, if I omitted the bananas and walnuts, would it change the consistency?

Heather, I bet it would be good too! Thanks so much for stopping by!

ooh yum!! i'm used to seeing jello salad at thanksgiving, courtesy of my uncle's ohio roots. his recipe doesn't have walnuts, but those sound like they'd add such a nice crunch, especially with all the other soft/creamy elements (:

Doug, thank you for sharing her recipe with me! I am so humbled I was able to honor her in this way. It brings back so many memories of my own Grandma Blackford, who's been gone over 30 years. Bless our Grandmas!

Awwwww I love that this is a grandma recipe :). My grandma made angel food cake for every birthday, and all kinds of treats from my Swedish great-grandmother. Her recipes are my most treasured--and the most delicious! This salad looks like a perfect addition to a summer BBQ. Happy Monday, Kim!
