How to Make Easy Chocolate Pudding Recipe

    1. Prepare your favorite 9-inch pie crust and blind bake it. Cool completely.
    2. Finely chop chocolate, set aside.
    3. To a medium saucepan, add the sugar, cornstarch, and salt by mixing together.
    4. Add in the milk and add the egg yolks. Whisk until fully combined.
    5. Turn the heat to medium and stir constantly until it just starts to bubble, 6-8 minutes. As soon as you see the mixture start to bubble and it has reached a pudding consistency, remove it from the heat.
    6. Immediately add the chopped chocolate, butter, and vanilla. Stir until the chocolate is fully melted and the mixture is fully combined.
    7. Pour the filling into the prebaked pie crust. Spread the filling out evenly and place it into the fridge uncovered to chill for at least 4 hours.
    8. Once the pie has set, cut it into slices and serve with whipped cream and perhaps some chocolate shavings!

To prepare the Vanilla Whipped Cream

    1. Whip the cream, icing sugar and vanilla extract all together until firm peaks form. Spread or pipe onto the top of the pie before garnishing with chocolate if you like.

    How to Make Chocolate Shavings:

    • Combine chocolate and shortening in a heat-proof bowl. Microwave at 30-second increments until the chocolate is melted, stirring in between each increment until completely smooth.
    • Using an offset spatula to thinly spread the chocolate over a flat surface, such as a cookie sheet. Refrigerate until the chocolate is firm. Use a bench scraper or the offset spatula to scrape the chocolate off the sheet pan.

    Chocolate Pudding Pie Tips

    1. Use high-quality chocolate to achieve the best possible flavor, opting for a high-quality bittersweet chocolate bar over chocolate chips or semi-sweet and milk chocolate bars.
    2. Save time by using a store-bought graham cracker or oreo crust or bake a store-bought pie crust.
    3. Temper the egg yolks to avoid curdling the egg yolks when adding them to the hot pudding mixture.  Rapidly whisk a small amount of the hot liquid into the eggs until their temperature has elevated.
    4. To Make filling dairy-free, use your favorite dairy-free milk in place of whole milk.
    5. Garnish pudding with homemade whipped cream, chocolate shavings, crushed pecans, a peanut butter drizzle, mini peanut butter cups, or some sliced fresh fruit!

    Storing & Freezing Chocolate Pie

    1. Store in the fridge for two to three days.
    2. Store in the freezer, by preparing your pie well in advance.  Allow the pie to cool completely before wrapping it tightly in a layer of plastic wrap and placing it in the freezer. Chocolate pudding pie will keep in the freezer for up to one month.

This homemade chocolate pudding pie is the best!  It's the perfect dessert that no one can resist any time of the day!  We're talking chocolate, so yeah.  Not going to miss a slice or two!
