    These scrumptious Cinnamon Roll Blondies are blondies with a buttery, cinnamon-sugar mixture swirled in and topped with a simple vanilla cream glaze.  You won’t believe how easy they are to make.

    These scrumptious Cinnamon Roll Blondies are blondies with a buttery, cinnamon-sugar mixture swirled in and topped with a simple vanilla cream glaze.

    These ultimate blondies are like a cinnamon roll, only in bar form. It’s like eating the center of the cinnamon roll loaded with lots of cinnamon and they taste totally irresistible!

    3 Elements To Making This Cinnamon Roll Blondie Recipe

    There are three elements to making this recipe.  The blondies, the cinnamon layer, and the vanilla glaze.  All three elements are easy to make and no mixer is required!

    1. Blondies: These blondies are deliciously flavored with butter, brown sugar and vanilla.  The cornstarch gives them a light and chewy texture. All you need is a whisk to make them!
    2. Cinnamon-Sugar Mixture: The buttery cinnamon and sugar mixture is spooned and swirled into the blondie batter to get that cinnamon roll in every bite! Oh my!
    3. Vanilla Glaze: Super simple to whip up confectioner's sugar, cream and vanilla, drizzled on top to make these cinnamon blondies even more super yummy!

    Ingredients You Need

    Cinnamon Roll Blondies Recipe

    • unsalted butter, melted 
    • brown sugar - gives them rich flavor
    • granulated sugar
    • eggs, room temperature
    • vanilla extract - gives them delicious flavor
    • all-purpose flour
    • cornstarch - helps give them chewy texture
    • baking powder 
    •  salt

    Cinnamon Layer

    • unsalted butter, melted
    • brown sugar
    • cinnamon - must have!  These are the major part of the cinnamon roll love!

    Vanilla Glaze

    • confectioners' sugar
    • vanilla extract
    • heavy cream or milk of choice
    • salt

    How to Make Cinnamon Roll Blondies

    Preheat the oven to 350°F and prepare a 9×9-inch pan by lining it with parchment paper (or lightly grease and flour). 

    Cinnamon Roll Blondies 

    1. Whisk together melted butter, brown sugar and sugar together in a large bowl until combined.
    2. Whisk in eggs and vanilla.
    3. Add flour, cornstarch, baking powder, and salt and whisk together until mixture is completely combined.
    4. Set aside as you prepare the cinnamon-sugar layer.

    Cinnamon Layer

    1. In a small bowl combine melted butter, brown sugar, and cinnamon. Mix well.

    Assembly

    1. Spread the blondie batter into prepared baking pan.
    2. Using a spoon, drizzle cinnamon layer over the blondie batter randomly, then using the tip of knife, swirl the cinnamon mixture into the batter. 
    3. Bake for 35-38 minutes, or until the edges just begin to turn golden brown and the center is no longer jiggly.
    4. Allow the bars to cool completely before adding the vanilla glaze.

    Vanilla Glaze

    1. Using a spoon, mix together the confectioner’s sugar, vanilla and cream together to get a thick glaze.  Microwave for 5-10 seconds if glaze is extra thick, to help thin the glaze, drizzling over the blondies.  
    2. Using a spoon, drizzle glaze over cooled blondies.  Let glaze set.

    Cinnamon Roll Blondie Recipe Tips

    • For the blondies, make sure the butter is melted and cooled enough to not cook the eggs when you add them to the butter/sugar mixture.
    • The eggs are best at room temperature.  However, as long as the melted butter is cooled enough, it is fine to use cold eggs straight from fridge, if you don't have time for the eggs to come to room temperature.
    • Check blondies at 35 minutes.  If blondies aren't jiggly when you gently shake the pan, they are done.  They should be a golden color as well. Do not over bake the blondies, to get a soft and chewy texture, otherwise the blondies will be dry and hard. I found 35 to be the perfect magic baking time.

    Storing Cinnamon Roll Blondies

    • Store blondies in a sealed container or ziplock bag at room temperature for 3-4 days.
    • Also, store these in the fridge, where they will keep for about 5-6 days.  Nuke them in the microwave for a warm, cinnamon blondie treat!

    Can I Freeze Cinnamon Roll Blondies?

    • You can freeze the cinnamon roll bars, but it's better if you don't add the glaze until after you've thawed them. It's super easy to whip up the glaze after the fact.
    • To freeze them, let them cool completely. Then, store them in a freezer-safe container for up to a month. Let them thaw at room temperature.
