    Super Easy Peanut Butter Cup Blondies are soft and gooey peanut butter fudgy blondies packed with mini peanut butter cups all throughout!  Definitely perfect for the peanut butter and chocolate lovers out there!

    Why I Love These Peanut Butter Cup Blondies!

    • So easy to make! You'll want to make this peanut butter blondie recipe over and over again.
    • Only 6 ingredients, unless you want to omit the peanut butter cups!
    • Mix it up in one  bowl - easy peasy!
    • No eggs or butter is used in this soft and thick peanut butter blondie recipe!  We used oil and peanut butter to replace!
    • These awesome blondies are exploding with so much peanut butter flavor, you'll be in total peanut butter cup heaven!
    • The only con is - peanut butter lovers will attack these like there's no tomorrow.  Always stash some back, just in case they swoop in and make them disappear quickly!

    Ingredients You Need

    • brown sugar
    • canola oil, or coconut oil, melted
    • creamy peanut butter - use sugar-free or natural peanut butter if desired
    • all-purpose flour
    • almond milk
    • mini peanut butter cups (I used Reese's) or if you want vegan, replace with vegan peanut butter cups.

    How to Make Peanut Butter Cup Blondies 

    1. Preheat oven to 350 degrees. Line an 8x8 inch baking pan with parchment paper and spray with non-stick cooking spray. Set aside.
    2. In a large bowl using mixer or whisk, beat together brown sugar, peanut butter and oil until smooth.
    3. Add the flour and mix together until combined. Add in milk and mix together. Fold in peanut butter cups.
    4. Transfer blondie batter into prepared pan and place in the oven to bake for 25-27 minutes, or until center is set and not wet in the center. The middle of the blondies will firm up while they cool.
    5. Cool blondies in pan completely before cutting into large or small squares.

    How To Make Vegan Peanut Butter Blondies

    To make vegan peanut butter blondies, replace mini peanut butter cups with vegan peanut butter cups.  Or use this homemade peanut butter cup recipe with vegan options for this peanut butter cup recipe!  There's already no eggs being used, so no worries on that front.

    Blondie Tips

    • Allow blondies to cool completely before slicing.  Blondies may crumble if still warm.
    • Want more servings?  Make a double batch of peanut butter blondies recipe and bake in 9x13 pan. Bake 30-35 minutes. You can find the options on the recipe card to double and triple the recipe if desired. 
    • Don't over bake blondies to keep them fudgy and gooey.  That's what blondies are all about!  Fudgy and gooey!
    • Look for the blondies doneness by the edges of the blondies turning golden brown.  The middle of the blondies may not look done, but they will continue baking once you pull them out of the oven.  The top of the blondies should not be wet.

    • 1 cup brown sugar packed
    • ¼ cup canola oil or can use coconut oil, melted and cooled
    • ¾ cup creamy peanut butter or can use sugar-free or natural peanut butter if desired
    • 1 cup all-purpose flour
    • ¼ cup almond milk or milk of choice
    • ¾ cup peanut butter cups or if you want vegan option, use vegan peanut butter cups

    Instructions

    Notes

    • Take the blondies out when they edges look browned, but the middle looks a little underdone.  As they cool out of the oven, they will continue to bake. That way you'll get those moist, gooey fudgy blondies you've been dreaming of.  
    • Make a double batch of peanut butter blondies recipe and bake in 9x13 pan when you want more blondies for special occasions and larger gatherings!
