- granulated sugar
- eggs
- ripe bananas
- crushed pineapple
- flaked sweetened coconut
- Sydney Blend Gluten Free Flour
- baking powder
- baking soda
- salt
How to make Pineapple Coconut Banana Bread

In a bowl, cream butter and sugar, then beat in eggs until incorporated.

Stir in mashed banana, crushed pineapple and coconut.

Combine dry ingredients into the creamed mixture and stir until combined.

Transfer and bake at 350-f degrees into a greased 8-in. x 4-in. loaf pan for 65-70 minutes or 9-in. x 4-in. loaf pan for 60-65 minutes or until bread test done.

Cool in pan 10 minutes; remove to a wire rack.

- ½ cup ripe banana mashed
- 7 ounces of drained crushed pineapple little over a ½ cup, I used Del Monte Fruit Refreshers Pineapple in Passion Fruit Flavored Slightly Sweetened Fruit Water
- ½ cup flaked sweetened coconut
- 2 cups Orley's Sydney Blend Gluten Free Flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
