How to Make The Best Homemade Red Velvet Brownies with Cream Cheese Frosting! 

  1. Preheat oven to 350 degrees.
  2. Line a 9×13 baking pan or baking dish with foil and very lightly grease the foil with vegetable shortening, like crisco.
  3. Melt milk chocolate and butter in microwave until melted or use a small saucepan, melt the butter over your lowest setting, then add the milk chocolate chips stirring constantly with a small whisk until melted and smooth. Turn off heat and let set.
  4. In a large mixing bowl, add the eggs, vanilla and sugars together and whisk together. Then whisk in the red food coloring.
  5. Next, whisk in the cooled down melted chocolate mixture into the egg/sugar mixture until combined and smooth. Make sure the melted butter isn’t hot, so it doesn’t curdle the eggs when you add it.
  6. Add flour, baking powder, salt  and cocoa powder together and stir together with a silicone spatula until mixture is completely combined.
  7. Pour red velvet brownie batter and spread out evenly into your prepared baking pan.
  8. Bake 40 minutes, until toothpick comes out clean and transfer pan to cooling rack and let cool for 15 minutes.
  9. Refrigerate, covered until cooled to frost or let brownies come to room temperature before frosting.
  10. Makes 12 large or 24 smaller brownies for 9×13 pan.

You can make these brownies in an 8×8, 9×9 or 9×13 pan.  Just adjust the servings in the recipe card below.

How to Make the Cream Cheese Frosting

  1. Place cream cheese, butter, vanilla, salt, confectioner’s sugar and cream/milk in mixing bowl. Using a mixer, beat on medium high until well combined. Mix until smooth and creamy. 

Frost the Brownies

  1. Frost brownies with an offset spatula or use a piping bag and fill it with frosting and pipe swirls on top of the brownies.  
  2. Place back in fridge until ready and let them come to room temperature about 30 minutes before serving.

More Festive Decorating Ideas!

If you want to get really festive, you can also cut out brownie hearts by using a heart-shaped cookie cutter after the brownies have been well chilled for nice cut outs.

To make them more festive, place a dark or milk chocolate heart-shaped Dove candy in the center. Add Valentine sprinkles or even drizzle with melted chocolate.

Red Velvet Brownies

  • 2 ¼ sticks unsalted butter cut into chunks
  • 3 ½ cups Ghirardelli Milk Chocolate Chips
  • 5 large eggs room temp
  • ½ cup granulated sugar
  • 1 ¼ cups packed brown sugar
  • 1 teaspoon salt
  • 1 ¼ teaspoons vanilla extract
  • 2 tablespoons red food coloring
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 3 tablespoons Ghirardelli unsweetened cocoa powder

Cream Cheese Frosting

  • 4 ounces cream cheese softened
  • 5 tablespoons unsalted butter room temperature
  • teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 or 3 cups confectioners sugar
  • 1-2 tablespoons heavy cream or milk of choice

Instructions

  4. Hi Shannon.It’s used in brownie batter, 2 and 1/4 sticks equals 1 and 1/4 cups and then down in the cream cheese frosting, 5 tablespoons butter equals 1/4 cup + 1 Tablespoon butter. Is this what you were looking for? If not, let me know! 🙂
