And since it is a tropical kind of summer, (90+ degrees here in Indiana) this Tropical Bliss Pineapple Coconut Banana Bread seems fitting, because it has all those ingredients, plus wonderful buttery undertones you can savour in this amazing quick bread. It literally melts in your mouth!
It’s a super moist banana bread with a tropical sunshine vibe of crushed pineapple soaked in passion-fruit juice, flaky coconut and ripe bananas and good news —It’s gluten free! (I’m really getting into this gluten free thing!)
It can be made with all purpose flour as well, but I had the pleasure of trying Blends By Orly – Sydney Blend – Gluten-free Baking Flour in this recipe and let me tell you, I am completely hooked. You don’t get that undesirable after-taste and crumbly texture in gluten free bread using the blended flour. It’s frustrating right? Tropical Bliss Pineapple Coconut Banana Bread {Gluten Free}
Ingredients
- 1/2 cup butter softened
- 1 cup sugar
- 2 eggs
- 1/2 cup ripe banana mashed
- 7 ounces of drained crushed pineapple little over a 1/2 cup, I used Del Monte Fruit Refreshers Pineapple in Passion Fruit Flavored Slightly Sweetened Fruit Water
- 1/2 cup flaked sweetened coconut
- 2 cups Orley's Sydney Blend Gluten Free Flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- In a bowl, cream butter and sugar, then beat in eggs until incorporated.
- Stir in mashed banana, crushed pineapple and coconut.
- Combine dry ingredients into the creamed mixture and stir until combined.
- Transfer and bake at 350-f degrees into a greased 8-in. x 4-in. loaf pan for 65-70 minutes or 9-in. x 4-in. loaf pan for 60-65 minutes or until bread test done.
- Cool in pan 10 minutes; remove to a wire rack.
