Seriously....we do know a peanut butter addict when we see one and we have plenty of them in this family to prove it. Peanut butter is a staple in the pantry and it gets ugly when we get down to the last spoonful. Thank goodness that doesn't happen too often. 🙂 We try to keep the cabinet stocked at all times!
Well my love for peanut butter is again on the dessert menu. I've made this the last 2 years. It's perfect whenever I want to make a dessert that was easy to prepare and give as gifts to friends and family or for the holiday party tray of goodies when entertaining.
It's an easy fudge you can make without much complication. It's made in the microwave and we all know the mighty microwave is a miracle of convenience that we love to take advantage of whenever possible.
And lastly, to make this Easy Buckeye Fudge 'Buckeye Official', don't hate me for adding a scrumptious layer of chocolate fudge on top as well. You don't have to add it. But, it's in my second nature to add chocolate to pretty much everything I can get away with.

Easy Microwaveable Buckeye Fudge
Ingredients
Peanut Butter Fudge Layer:
- 1 cup butter softened
- 1 cup creamy peanut butter
- 1 teaspoon vanilla
- 3 ½ cups powdered sugar
Chocolate Fudge Layer:
- 1 ½ cups milk chocolate chips or semi-sweet chocolate chips
- 1 tablespoon butter softened
- 7 ounces sweetened condensed milk (½ of a 14 ounce can of Eagle Brand Sweetened Condensed Milk)
Instructions
- Prepare an 8” or 9” pan greasing with butter or line with parchment paper.
Peanut Butter Fudge Layer:
- In a microwave bowl, add the peanut butter, butter and vanilla and melt in the microwave for 90 seconds.
- Stir to combine until smooth and creamy using a rubber spatula or wooden spoon.
- Add the powdered sugar a cup at a time and stir to incorporate thoroughly.
- Transfer mixture to the pan and press into the pan with your hands.
Chocolate Fudge Layer:
- In a microwave bowl, melt the chocolate chips in 30 second increments until melted about a total of 1 minute to 1-½ minutes. Add in butter and sweetened condensed milk and stir until smooth and creamy.
- Pour over the peanut butter fudge.
- Let cool at room temperature at least 4 hours before cutting, or chill in the refrigerator for faster set up time.
- Cut into bite size servings and store in an airtight container in the refrigerator for up to a week.
