    Easy Microwaveable Buckeye Fudge

    Easy dreamy, rich and decadent Buckeye Fudge you can make in the microwave in a snap!  Everyone loves chocolate and peanut butter!  It's a win-win!  When peanut butter is on the menu, who's instantly hooked? 

    I guarantee this Easy Buckeye Fudge will have you hooked and ready to indulge or inhale!  Just like this Buckeye Pie and this Buckeye Candy

    Peanut butter tastes great right out of the jar (use a spoon please!), in soft and fudgy peanut butter cookies (my fave) and DEFINITELY in this Easy Microwaveable Buckeye Fudge  -- for realz!

    Seriously....we do know a peanut butter addict when we see one and we have plenty of them in this family to prove it.  Peanut butter is a staple in the pantry and it gets ugly when we get down to the last spoonful.  Thank goodness that doesn't happen too often. 🙂  We try to keep the cabinet stocked at all times!

    Well my love for peanut butter is again on the dessert menu.  I've made this the last 2 years.  It's perfect whenever I want to make a dessert that was easy to prepare and give as gifts to friends and family or for the holiday party tray of goodies when entertaining.

    Easy Microwaveable Buckeye Fudge

    It's an easy fudge you can make without much complication.  It's made in the microwave and we all know the mighty microwave is a miracle of convenience that we love to take advantage of whenever possible.

    And lastly, to make this Easy Buckeye Fudge 'Buckeye Official', don't hate me for adding a scrumptious layer of chocolate fudge on top as well.  You don't have to add it.  But, it's in my second nature to add chocolate to pretty much everything I can get away with.

    Ingredients
      

    Peanut Butter Fudge Layer:

    • 1 cup butter softened
    • 1 cup creamy peanut butter
    • 1 teaspoon vanilla
    • 3 ½ cups powdered sugar

    Chocolate Fudge Layer:

    • 1 ½ cups milk chocolate chips or semi-sweet chocolate chips
    • 1 tablespoon butter softened
    • 7 ounces sweetened condensed milk (½ of a 14 ounce can of Eagle Brand Sweetened Condensed Milk)

    Instructions
     

    • Prepare an 8” or 9” pan greasing with butter or line with parchment paper.

    Peanut Butter Fudge Layer:

    • In a microwave bowl, add the peanut butter, butter and vanilla and melt in the microwave for 90 seconds.
    • Stir to combine until smooth and creamy using a rubber spatula or wooden spoon.
    • Add the powdered sugar a cup at a time and stir to incorporate thoroughly.
    • Transfer mixture to the pan and press into the pan with your hands.

    Chocolate Fudge Layer:

    • In a microwave bowl, melt the chocolate chips in 30 second increments until melted about a total of 1 minute to 1-½ minutes. Add in butter and sweetened condensed milk and stir until smooth and creamy.
    • Pour over the peanut butter fudge.
    • Let cool at room temperature at least 4 hours before cutting, or chill in the refrigerator for faster set up time.
    • Cut into bite size servings and store in an airtight container in the refrigerator for up to a week.

    Notes

    Set the fudge on the counter and let it warm at room temperature for a few minutes before slicing into bite-size pieces for nice even slices of fudge.  Cutting it cold right out of the fridge; the layers may separate. 🙂
    I used an 8" pan and cut in 48 pieces. Fudge was thick, which I prefer, but if you want a thinner fudge, use a 9" pan.
    Double recipe to use the whole can of sweetened condensed milk.

      Kim, growing up 30 miles from Ohio, I seem to be genetically drawn to anything named “buckeye”. Ok maybe because I am a peanut butter and chocolate addict, too! (Hehe) This fudge looks seriously delish, Kim! And so easy it would be a shame to not make it!?
