Helpful Tips for Chocolate Covered Strawberry Cheesecake Bites

  • These are so fun to serve and best when served still frozen.  Once they are unfrozen, the chocolate will stay intact but the cheesecake inside will get soupy if left out too long at room temperature. So get these out right when you are ready for the guests to partake.  It won’t take long for them to disappear. 
  • Use a good quality chocolate to coat your cheesecake like Ghirardelli’s Melting Chocolate I love this stuff!  Just dump the chocolate in a bowl and stir in 30 second increments until melted in the microwave. 
  • If for some reason your chocolate of choice is too thick, just add a teaspoon of cooking oil, like canola and whisk it in.  It should thin out your chocolate. 
  • Any chocolate will work, but use something good quality, ensuring the best chocolate taste and texture for setting up! Chocolate chips, baking bars and wafers of white, milk chocolate, dark chocolate, yes!
  • When making the cheesecake, use chopped strawberries that are smaller, not larger.  It looks prettier with the small, plus too big of strawberry chunks in the cheesecake while frozen isn’t as pleasurable as the smaller bits of strawberry.
  • When cutting the cheesecake into bites, 1 inch cuts into the cheesecake is good.  The cheesecake will be frozen when you try cutting it.  Make sure you have the cheesecake on something solid, like a cutting board when cutting into the cheesecake.  You may have to wait 15 minutes or so before cutting into it, but once you have cut your bites, place the cheesecake back into the freezer until you’re ready to coat them with chocolate.
  • The cheesecake must be frozen to dip it in the chocolate.  Otherwise, it will be too hard to coat it with the warm chocolate coating.

Ingredients You Need: (see Recipe for Keto/Gluten-free Options)

Graham Cracker Layer

  • 1 cup graham cracker crumbs or 1 sleeve of graham cracker, crushed
  • ¼ cup pecans finely chopped
  • ¼ cup butter melted

Cheesecake Filling

  • 16 oz cream cheese softened
  • ⅓ cup sugar
  • ¼ cup sour cream
  • 2 large eggs slightly beaten
  • 1 teaspoon vanilla extract
  • 4-5 large strawberries, diced/chopped do not recommend using large strawberry chunks

Chocolate Coating

  • 1  – 12 oz . bag Ghirardelli Chocolate White, Milk or Dark Melting Wafers

How to Make Chocolate Covered Strawberry Cheesecake Bites

  1. Preheat oven to 325 degrees and line an 8-inch square baking pan with foil or parchment paper and slightly spray with non-stick spray.
  2. Combine the graham cracker crumbs, pecans and melted butter in a small bowl well and press into baking pan. Set aside.
  3. In a large bowl, beat the cream cheese, sugar and sour cream until smooth. Add in slightly beaten eggs and vanilla and beat on low speed until just combined. Add diced strawberries and mix in. Pour over crust. Bake for 35-40 minutes or until center is almost set. Cool on a wire rack and then freeze overnight.
  4. When ready to coat with chocolate, using microwave, melt white, milk or dark chocolate wafers in 30 second increments, stirring in between increments until melted.
  5. Take cheesecake out of freezer and lift out of pan by pulling the sides of the foil or parchment paper up and out. Cut cheesecake into 1 inch squares when you can cut through the frozen cheesecake, it may need to sit out a few minutes. Work with a few pieces at a time for dipping; keep remaining squares in freezer until ready to dip.
  6. Using a fork on the bottom of the cheesecake square, one at a time, completely dip bites in melted chocolate, and using spoon in other hand, spoon chocolate on top to cover all spots, and allow excess to drip off and place on waxed or parchment lined baking sheets. Add some sprinkles if you wish.
  7. Reheat chocolate if needed to finish dipping.

Notes

  • One of the perks of this dessert is you don't have to do it all at once, or eat them all at once. Pop a couple with or without the chocolate coating anytime you need a sweet fix.
  • Keto / Sugar-free Option:  Substitute sugar options with Lakanto's Monkfruit Sugar or something similar with same measurements 1 to 1 to sugar.  Use sugar-free chocolate chip for chocolate coating, like Lily's.  Use sugar-free cookies or graham cracker crumbs for bottom layer for substituting.
  • Gluten-free - Use Pamela's Gluten-free graham crackers or cookies for gluten free option.
