How We Started with a Cake Mix For Our Strawberry Shortcake Cupcake Recipe

We started with a white cake mix and baked some cupcakes!  Next I just took a scoop and took some cake out of the middles of the cupcakes and filled them with some already prepared whipped cream (Cool Whip).

For the tops, we piped some easy cream cheese buttercream (store-bought or homemade) borders or dams as they call it, on top of the cupcakes to hold in the strawberry filling on top. I like it to kind of drip over the sides a little to give it a some dramatic flair!

Place them in the fridge until ready to serve and lose your mind when you take a huge bite of yumminess! They look sooooo good and taste soooo good!

Ingredients You Need

Vanilla Cake 

  • 1 box + ingredients needed vanilla cake mix – prepare as instructed on box. Other options: strawberry cake mix – prepare as instructed on box.

Whipped Cream

  • 2 cups whipped topping like Cool Whip or Dream Whip, something with stabilization

Strawberry Fruit Filling

  • Fresh Strawberries, chopped
  • 1 ½ cups strawberry preserves, strawberry glaze or strawberry pie filling – use more if needed

Cream Cheese Frosting or use Store-bought Cream Cheese Frosting

  • 4 ounces cream cheese
  • ⅓ cup butter softened
  • 4-5 cups confectioners sugar add more if needed. Frosting needs to hold up to hold the filling in.

How to Make Strawberry Shortcake Cupcakes

Vanilla Cupcakes

  1. Prepare cupcakes as directed on cake box and let cool or 

Whipped Cream

  1. We’re using Cool whip, so nothing to prepare for the filling.

Strawberry Fruit Filling

  1. While cupcakes are baking, mix together the chopped strawberries and strawberry preserves, strawberry glaze or strawberry pie filling and set aside.

Cream Cheese Frosting or use Store-bought Cream Cheese Frosting

  1. If using store-bought frosting, omit the frosting steps. In medium-large bowl, beat cream cheese and butter until well combined with mixer. Beat in cup of powdered sugar.
  2. Beat in rest of powdered sugar until frosting is pipeable consistency. 

Assembly

  1. After the cupcakes are cooled, take a knife and cut a ½” circle in the middle of the cupcakes, {cut it like a cone, so tip of knife goes toward center instead of straight down, can also use a mini cookie scoop or large piping tip} and take the core out of the cupcakes.
  2. Pipe or spoon whipped cream into each cupcake.
  3. Place frosting in pastry bag with medium star tip and pipe a dam or border around the top of the cupcakes. Make sure frosting is stable enough to hold the strawberry filling inside. If it’s too loose, it will fall off the sides of the cupcakes.
  4. Spoon strawberry fruit filling into the center of each cupcake. Garnish with more fresh strawberries on top if desired.

  1. Hi Kim: just wondering why in the “assembly” instructions, # 3 says to “Make sure frosting is stable enough to hold lemon curd inside.”. There is no lemon curd in these. Just wondering. Thanks.
