Holy Cow! It's almost Valentine's Day already! Of course, I would love some diamonds, chocolates or beautiful roses for Valentine's day or all the above. Am I right ladies? Oh and of course, wined and dined is always nice. *ahem...hopefully he's reading this*
How to get the Perfect Lofthouse Swig Sugar Cookies
- Make sure you measure out just the right amount of flour in the dough to avoid dry, crumbly cookies. Use the Fluff up Flour Method!
- Don’t press the cookies too thin. Go for between ¼- and ½-inch
- As with most cookies, underbaking just a tad is way better than overbaking.
- Use a medium or large cookie scoop
and roll the thick dough into balls.
- Using a flat bottom glass that has been dipped in sugar, press down on cookies to get that crinkly edge.
- The cookies will spread just slightly while baking, but they should retain their rough edges for that signature soda shop look.

'Pink Velvet' Lofthouse Cookies {CopyCat Recipe}
Ingredients
Cookies
- 1 cup unsalted butter softened
- ¾ cup canola oil or oil of choice
- 1 cup granulated sugar
- ¾ cup powdered sugar
- 2 tablespoons sour cream or Greek yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- red or pink food coloring or gel to tint cookie dough
- ½ teaspoon baking soda
- ½ teaspoon cream of tartar
- ½ teaspoon salt
- 5 ½ cups all-purpose flour
- ½ cup granulated sugar for pressing the cookies
Cream Cheese Icing
- 4 ounces cream cheese
- ¼ cup butter softened
- 1 teaspoon vanilla
- 2 cups powdered sugar sifted
- ¼ teaspoon salt
- 2 teaspoons almond milk or milk
or
- 2 tubs of Cream Cheese Frosting
Instructions

- Preheat oven to 350 degrees. Line cookie sheets with parchment paper. Set aside
- In a medium bowl, whisk together the baking soda, cream of tartar and salt together, set aside.
- In another large mixing bowl, using mixer, add the butter, oil, granulated sugar and powdered sugar. Slowly add the baking soda, cream of tartar & salt mixture into the butter mixture. Mix until well-combined and creamy, 1-2 minutes.
- Add the sour cream/yogurt, eggs and vanilla and mix until well-combined, 1-2 minutes, again scraping down the sides of the bowl as needed.
- Add the food coloring/gel with with a toothpick to the mixture. Cookies will bake lighter than dough appears, so that will help with the color shade you are trying to achieve.
- Add the flour and mix until no dry streaks remain and the mixture is evenly combined. As you are mixing, make sure to add more food color/gel if needed as you are mixing the cookie dough, making sure not to overmix.
- Using a medium or large scoop, make balls of dough. Lightly spray the bottom of a flat-bottomed glass with cooking spray and dip the bottom of the glass into the sugar. Press each cookie into an even thickness about ¼" to ½" inch dipping the bottom of the glass into the sugar between each press to get that crinkly edge.
- Bake for 9-12 minutes until just set. Don't overbake, you don't want cookies to be brown on bottoms.
- Transfer to a wire rack to let cool.
Cream Cheese Icing (or use store-bought cream cheese frosting)
- Combine all the frosting ingredients together. Beat until thick and creamy.
- (Warm up in microwave a smidge 10-15 seconds if you want a thinner glaze to spread on top, it will thicken up as it cools.)
- Frost cookies and sprinkle with your decoration of choice.

These cookies were really good and the perfect south loft house texture! They were however a little too salty, I would cut down the salt to a 1/8teaspoon for the cookie dough and the a 1/4 a teaspoon for the frosting
