So, I came up with a list of add-ins, but you can also buy trail mix and just add it into the cookie batter.  But, first, can I just say…these cookies are interesting to me because they can be changed up so many ways!  

Firstly, they are so, so moist. and secondly, they are killer delish!!  And thirdly, they are super, super easy to make as you will see in the recipe. 

You can make these cookies as decadent as you want , super healthy or somewhere in the middle. Plus, it’s easy to customize your trail mix and swap in your favorite ingredients based on your preferences.

Ingredients You Need

  • unsalted butter, softened or use vegan butter for vegan option
  • brown sugar
  • granulated sugar
  • vanilla extract
  • pumpkin puree
  • milk or water
  • all-purpose flour
  • baking powder
  • baking soda
  • salt
  • ground cinnamon
  • pumpkin spice
  • Trail Mix of choice or you can use any nuts, chocolate chips or chunks and dried fruits as well.

How to Make Pumpkin Trail Mix Cookies

  1. Preheat oven at 325 degrees.
  2. Line baking sheets with parchment paper or spray with non-stick spray.
  3. Using a mixer, in a medium-sized bowl, cream together the butter, brown sugar and granulated sugar until fluffy and light, about 2-3 minutes.
  4. Add the pumpkin vanilla, and milk or water and mix together until combined.
  5. Add the flour, baking powder, soda, salt and spices to the wet mixture and using mixer, mix until combined, and do not over-mix. Dough will be very soft.
  6. Stir in the trail mix.
  7. Drop cookie dough by heaping tablespoonfuls or by using a small cookie scoop onto the prepared baking sheets.
  8. Bake for 10-12 minutes until the edges are set but the middles are still a little bit soft.
  9. Cool on the baking sheet 4-5 minutes before removing to a wire rack to cool completely.

Storing Pumpkin Trail Mix Cookies

  1. Store at room temperature for 3-4 days in an airtight container or freeze up to 3 months.
