What’s great about these chocolate cake truffles are you can choose to make them with a cake mix straight from the box or you can bake a cake and make them with the cake.

The latter, is excellent option when you have leftover cake, so you don’t have to waste it by throwing it away.

Ingredients You Need for Option 1 (with Baked Chocolate Cake)

How to Make Chocolate Cake Cheesecake Truffles with Baked Chocolate Cake

  1. Bake 9×13 cake according to instructions and let cool. 
  2. Crumble up the chocolate cake, then add in the softened cream cheese and and mix together using a mixer or food processor until fully incorporated.
  3. Using a 1″ tablespoon cookie scoop, roll out truffles into balls and place on a sheet pan lined with parchment paper. Repeat until all of the mixture has been used up.
  4. Place sheet pan in freezer for at least 30 minutes.
  5. Once the truffles have finished firming up in the freezer, place chocolate in a microwave safe bowl and heat until melted.
  6. Roll each truffle in chocolate until fully coated and then transfer back to the lined sheet pan. 
  7. Once all the cheesecake truffles are done, return to the refrigerator until you are ready to serve.

Ingredients You Need for Option 2 (with Dry Chocolate Cake Mix)

  • 15.25 ounce box of chocolate fudge cake mix
  • cream cheese, softened
  • chocolate melts or chocolate chips
  • chocolate sprinkles

How to Make Chocolate Cake Cheesecake Truffles with Dry Chocolate Cake Mix

You can also make these without baking the actual cake as another option, which is an easier option! 

  1. Before making the truffles, heat treat the dry cake mix by pouring the dry cake mix into a medium-sized heat-safe bowl. Microwave the cake mix in two 30-second intervals, stirring after each interval. 
  2. Allow the cake mix to cool completely before mixing into the cream cheese. Add in the softened cream cheese and and mix together using a mixer or food processor until fully incorporated.
  3. Using a 1″ tablespoon cookie scoop, roll out truffles into balls and place on a sheet pan lined with parchment paper. Repeat until all of the mixture has been used up.
  4. Place sheet pan in freezer for at least 30 minutes.

Truffle Tips

  • Make sure the cream cheese is softened for a smoother, creamy filling for the truffle mixture.  Otherwise, the mixture will be lumpy and inconsistent.
  • You can opt to dip the truffles the next day, if you want.  Just make the balls and place them in the fridge or freezer in a sealed container, and then dip them when you’re ready.
  • If cake balls are crumbly while you dip them, place them in freeze to firm up for 30 minutes or so.
  • If chocolate coating is too thick, add some vegetable, canola or coconut oil to thin the chocolate out.  You may need to reheat it 15-30 seconds if it’s thickening up as well, as it cools.

How to Store Chocolate Cake Truffles

  1. To Store: Store truffles in an airtight container in the refrigerator for up to 5 days.
  2. To Freeze: It is recommended you freeze the chocolate cake balls without the chocolate coating for up to 2 months. Allow the frozen chocolate cake balls to thaw overnight in the refrigerator before coating them with chocolate for best results.
