Tips and Tricks for Monster Halloween Brownies

  • For easier cutting, If you chill your brownies before cutting them, this will give them the cleanest looking slices. Bring to room temperature to serve.
  • When frosting brownies, you can outline the brownies with the frosting and fill them in and then use an offset spatula to smooth out the frosting.  You can also refrigerate brownies and then place a piece of parchment paper on top of the frosting and gently press down to smooth out the frosting as well.
  • When piping stitches, lines and mouth, use a small round piping for better looking piping.  It’s also better if the frosting isn’t super thick or way too creamy.  You want a good consistency of smoothness and texture so when you apply pressure to pipe your lines, they pipe easily and look good.

More Variations

  • Add chocolate chips or oreos to your brownie batter if you want more textures and more chocolate flavor!
  • You can also make the bride with light lavender frosting instead of the green frosting for the face. I’ve seen it both ways.
  • Dust a little edible glitter if you want a metallic look to your monster faces.
  • Candies and sprinkles are definitely welcome, change them up or use what you have on hand, like m&m’s, mini peanut butter cups, pretzels, rolo’s and so on…just get creative and work it!

Notes

Vanilla Buttercream Frosting Recipe

  • 1½ cups unsalted butter , softened
  • 5-6 cups powdered sugar
  • 1 Tablespoon vanilla extract or cake batter extract
  • pinch of salt
  • 2 - 3 tablespoons heavy whipping cream

Vanilla Buttercream Frosting

  1. Using mixer on a medium setting, cream the butter until it is smooth and has lightened in color, about 3 minutes.
  2. Add confectioner's sugar, ½ a cup at a time. After each cup has been incorporated, turn the mixer onto the highest speed setting and for about 10 seconds to lighten the frosting.
  3. Add vanilla and a pinch of salt and combine until well-incorporated.
  4. Add heavy cream until the frosting has reached the preferred consistency.
  5. For a firmer frosting, add more confectioner's sugar, a ¼ cup at a time.
  6. For a softer frosting, add more milk or cream, a tablespoon at a time.
