How to Make Easy 2 Ingredient Eggnog Custard with Options

How to Make Eggnog Custard Recipe

  1. Preheat oven to 325 degrees F. Place 4 ramekins or custard cups into a shallow baking dish with hot water on standby to fill the dish with hot water to half-way up the sides of the ramekins.
  2. In a small saucepan, gently heat eggnog over medium heat until hot enough to scald the milk, without boiling, stir or whisk frequently. Small bubbles will appear just along the edge of the pan. Remove hot milk mixture from heat.
  3. Using a mixer, beat the egg yolks in a large bowl well, add sugar if you want eggnog custard sweeter and mix in.
  4. Once the eggnog is heated, gradually add it to the egg mixture while mixing on slow speed until combined.  
  5. If you do have cooked eggs in your mixture, pour strained mixture into a pourable container and pour custard into ramekins. Add rum/brandy if desired.
  6. Place filled ramekins in a large baking dish and fill the baking dish with hot water so that it comes 1/2 of the way up the sides of the ramekins, you can also place the ramekins in the baking dish and add the water as well.  Be careful not to get any water in the custard!
  7. Bake at 325 degrees F for 40-50 minutes or until the edges are set but the center is still a little jiggly, as it will set as it cools. Baking times will depend on how deep the custard is in the ramekins. (Smaller ramekins for shorter baking time and deeper custard for longer baking time). The top will appear set but underneath it will still jiggle. Refrigerate for 4 hours or overnight up to 3 days.
  8. To serve, sprinkle some freshly grated nutmeg on top if desired or garnish with fresh fruits, whipped cream or shaved chocolate.

How to Get Caramelized Sugar for Creme Brulee Eggnog Custard Option

  1. Sprinkle each custard with 1 tablespoon granulated sugar and torch or broil just until caramelized. Serve immediately or chill to serve later.
  2. Garnish with fresh fruits, whipped cream or shaved chocolate.

Baking Tips for Homemade Eggnog Custard Recipe

  1. If you do have cooked eggs in your mixture, pour mixture through a strainer and then pour custard into ramekins.  This will happen if you don’t temper your eggs and eggnog together when you start mixing them together.  It’s best to add a little at a time, mixing it while you add the hot eggnog to the eggs.
  2. Do not skip the water bath!  Just fill the pan with hot water once you’ve placed your ramekins into your baking pan about a 1/2 inch to an inch high.
  3. Baking time will vary depending on the shape and depth of your baking dish. When in doubt, bake a little longer until the edges are completely set.  My oven bakes these perfectly at 50 minutes! 

Storing Eggnog Custard

Once the eggnog custard is baked, refrigerate for 4 hours or overnight up to 3 days.  Even eat it warm after it’s set up after coming out of the oven!  I won’t tell! 

How to Serve Eggnog Custard

Add some nutmeg – Sprinkle on top right before serving as the fragrance of the spice is more enjoyable as a garnish and doesn’t overpower the delicate flavor of the eggnog.  Plus, it makes the dish look super impressive!  Add a little cinnamon or cloves for some extra holiday spice while you make the eggnog mixture if you wish.

Other Options: You can also serve these with some fresh fruit like raspberries or some dreamy whipped cream!
