Pineapple Fluff Layers

Top layer

  • ¼ cup remaining graham cracker mixture
  • Optional: Extra Cool Whip or whipped cream for garnish with maraschino cherries
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

Graham Cracker Crust

  • Prepare your graham cracker crust by combining the graham cracker crumbs and cooled, melted butter in a medium sized bowl and mix well.
  • Measure out ¼ cup of the graham cracker crumbs for the top, set aside.  Firmly press the remaining of the graham cracker crumb mixture into an 8-inch square pan and place in refrigerator or freezer to chill while you prepare the Pineapple Fluff Layers.

1st Layer

  • Using a mixer, beat the cream cheese and butter together in a large mixing bowl until smooth and creamy.
  • On low speed, add the powdered sugar one cup at a time until fully combined.
  • Once it's all combined, mix on medium-high for another minute.
  • Add in 1/4 cup of the drained pineapple and mix in well.
  • Take the graham cracker crust out of the fridge/freezer and spoon and spread the pineapple/cream cheese mixture over the graham cracker crust evenly.

2nd Layer

  • Fold in the remaining pineapple into the whipped cream and spoon and spread on top of the pineapple/cream cheese mixture.

Top Layer

  • Sprinkle the remaining graham cracker crumb mixture on top whipped cream pineapple mixture. Add chopped pecans, walnuts if desired
  • Refrigerate for at least 4 hours, preferably overnight.
