We made these super easy by using a brownie boxed mix to make this layered mint brownie recipe simpler. But feel free to use this brownie mix or this one if you want to make the recipe all the way homemade!
Mint Cream Layer
Using mixer, beat the butter on medium speed until smooth and creamy, about 2 minutes. Add the powdered sugar and milk and beat for 2 minutes on low speed, then increase to high speed and beat for 1 additional minute. Add the mint extract and food coloring and beat on high for 1 full minute.
Frost cooled brownies and place the baking sheet in the refrigerator while you make the chocolate ganache.
Chocolate Ganache
Melt the butter and chocolate chips in microwave safe bowl in 20 second increments, stirring after each, in the microwave. Once melted and smooth, pour over mint layer.
Gently spread with a knife or offset spatula.
Let ganache set for 20 minutes or chill the finished recipe 30 minutes before cutting for cleaner slices.
For clean cutting, use a very sharp large knife, wiping the knife off with a paper towel between each cut.
Notes
Room Temperature - Best served at room temperature or just slightly chilled!
Refrigerator - Store brownies in the refrigerator in a sealed container for about 4-5 days. Let them sit at room temperature for about 20 minutes before serving.
Freezing - To freeze brownies, cut and wrap individually and place them in a ziplock bag or a sealed container.
