Ingredients

Cherry Buttercream Frosting

  • 1 cup unsalted butter 2 sticks, softened
  • 3 - 4 cups confectioner’s sugar sifted
  • Pinch of salt
  • 2 teaspoons cherry extract or vanilla extract (can also use maraschino cherry juice 2-3 tablespoons
  • 2-3 tablespoons almond milk or cream
  • 1-2 drops pink food gel
  • sprinkles

Instructions

Soft Sugar Cookie Bars

  • Preheat oven to 375°F. Grease or line a 9x13-inch pan with parchment paper.
  • Cream butter, granulated sugar, and powdered sugar until light and fluffy. Beat in eggs and vanilla.
  • Mix in flour, baking powder, and salt until combined.
  • Press dough evenly into the pan and bake for 12–15 minutes, checking at 12 minutes. The center will look slightly underbaked. Cool completely before frosting.

Cherry Buttercream Frosting

  • Cream butter until fluffy, then gradually mix in powdered sugar (½ cup at a time).
  • Add cherry extract, salt, and milk or cream as needed to achieve a light, fluffy consistency.
  • Optional: Add food coloring and sprinkles for decoration.
