Easy Blueberry Cheesecake Delight

Ingredients

Graham Cracker Crust

  • 1 ½ cups graham cracker crumbs 12 full sheet graham crackers, crushed into crumbs
  • 3 tablespoons granulated sugar
  • 6 Tablespoons unsalted butter or salted butter melted or coconut oil melted (add a pinch of salt if using unsalted/coconut oil)

Blueberry Layer

  • 21 ounces Lucky Leaf blueberry pie filling

Cream Cheese Layer & Whipped Topping Layer

  • 8 ounces cream cheese softened
  • 1 cup powdered sugar
  • 12 ounces whipped topping thawed 3 cups & divided (1 cup for the cream cheese layer and 2 cups for the topping)

Instructions

Graham Cracker Crust

  • In a small bowl combine the graham cracker crumbs and granulated sugar and stir to combine. Add the melted butter and stir until all the crumbs are moistened.
  • Press the crumb mixture evenly into the bottom of an 8x8 pan and place into the refrigerator while you make the cream cheese layer.

Cream Cheese Filling

  • In a mediums-sized bowl, using an electric mixer, beat the cream cheese until smooth.
  • Add the powdered sugar to the cream cheese and mix until there are no lumps.
  • Add 1 cup of the whipped topping to the cream cheese mixture and reserve the other 2 cups for the last step, and mix until smooth and creamy.

Assembling the Blueberry Cheesecake Delight

  • Remove the graham cracker crust from the fridge.
  • Pour the blueberry filling over the crust and spread out evenly.
  • Spoon the cream cheese mixture over the blueberry filling and spread out gently and evenly.
  • Top with remaining whipped topping and place into a refrigerator until it’s time to serve. If desired, top with some graham cracker crumbs and some fresh blueberries.
