Country Apple Fritter Muffins

Fluffy, buttery, white cake muffins loaded with chunks of apples and layers of brown sugar and cinnamon swirled inside and on top. Simply Irresistible!

Old-Fashioned Creme Glaze

  • ½ cup of powdered sugar
  • 1-3 tablespoons of milk or cream- depending on thickness of glaze wanted

Instructions

  • Preheat oven to 350°F. Prepare a muffin pan with non-stick spray or liners.
  • Mix brown sugar and cinnamon; set aside.
  • Beat white sugar and butter until creamy. Add eggs one at a time, then vanilla.
  • Combine flour and baking powder, then mix into creamed butter. Stir in milk until smooth.
  • Fill muffin cups halfway with batter. Top with apple mixture and sprinkle brown sugar/cinnamon. Lightly pat into batter.
  • Add remaining batter over the apples, spreading evenly. Top with more apples and pat lightly.
  • Optionally, swirl brown sugar mixture through apples with a knife or spoon.
  • Bake for 20–25 minutes, until a toothpick comes out clean.
  • Mix powdered sugar and milk for glaze. Cool muffins for 15 minutes before drizzling.
