Cosmic Brownies

Cosmic Brownies are the retro brownies we love, complete with a silky chocolate frosting and colorful rainbow candy coated chocolate chips on top.

Ingredients

Cosmic Brownies

  • ¾ cup unsalted butter 1 ½ sticks, melted
  • 2 large eggs
  • 1 cup granulated sugar
  • cup brown sugar packed
  • 2 tablespoons milk of choice
  • 2 teaspoons vanilla extract
  • ¾ cup unsweetened cocoa powder
  • ¾ cup all-purpose flour

Chocolate Ganache Frosting

  • 1 ½ cups semi-sweet chocolate chips
  • ½ cup heavy cream
  • 1 cup rainbow candy coated chocolate chips or mini M&M Minis

Instructions

Cosmic Brownies

  • Preheat oven to 350 degrees F. Line a 9x9 inch pan with foil or parchment paper. Spray with non stick cooking spray.
  • Melt butter in the microwave for 1-2 minutes in a large bowl.
  • Using whisk, whisk in brown sugar, granulated sugar, eggs, milk, and vanilla.
  • Whisk cocoa powder and flour in a separate bowl, then add to wet mixture until smooth.
  • Spread batter in prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.

Chocolate Ganache Frosting

  • Heat the cream in a small saucepan over medium heat until it begins to gently simmer. Do not let it come to a rapid boil– that’s too hot! Can also microwave cream with same results.
  • Add chocolate chips. Stir occasionally until smooth.
  • Pour ganache over brownies. Smooth with an offset spatula.
  • Sprinkle with candy coated chocolate chips or mini M&Ms.
  • Refrigerate brownies until the ganache has set.
