Chai Brownie Blondies
- 1 box (18.3 ounces) dark chocolate brownie mix
- 2 large eggs
- ⅓ cup melted butter
- ¼ cup milk of choice
- 1 teaspoon chai spice
- 1 teaspoon vanilla extract or vanilla bean paste
- ½ cup white chocolate chips
Make the batter
Stir 1 teaspoon chai spice into 1/3 cup melted butter and let it bloom for 1 minute. In a large bowl, stir together the spiced butter, 1 box (18.3 ounces) brownie mix, 2 large eggs, 1/4 cup milk, and 1 teaspoon vanilla extract or vanilla bean paste until smooth and thick. Fold in 1/2 cup white chocolate chips.
Bake and cool
Spread the batter evenly in the prepared 8x8-inch pan. Bake at 325°F for 49 to 55 minutes, until the edges are set and a toothpick near the center has moist crumbs. Cool completely, then cut into 9 large or 16 small bars.
Do not overbake. The center should look soft when the edges are set; the bars finish setting as they cool.
