Ingredients

Banana Protein Bar Batter

  • 1 cup mashed ripe banana (about 2 large bananas)
  • ½ cup creamy nut butter
  • cup agave
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • ½ cup vanilla protein powder or peanut butter protein powder
  • ¼ cup collagen peptides
  • 2 tablespoons ground flaxseed
  • 4 tablespoons hemp hearts
  • ¼ cup chopped walnuts
  • ¼ cup mini chocolate chips
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Instructions

  • Preheat the oven to 350°F. Line an 8 x 8-inch pan with parchment paper, leaving an overhang.
  • Stir 1 cup mashed ripe banana, 1/2 cup creamy nut butter, 1/3 cup agave, and 1 teaspoon vanilla extract until smooth.
  • Stir 1 cup rolled oats, 1/2 cup protein powder, 1/4 cup collagen peptides, 2 tablespoons ground flaxseed, 4 tablespoons hemp hearts, 1/4 cup chopped walnuts, 1/4 cup mini chocolate chips, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt into the banana mixture until fully combined.
  • Press the mixture firmly into the lined 8 x 8-inch pan. Bake at 350°F for 18 to 22 minutes, until the edges are set and the center is gently firm. Cool completely before slicing into 9 bars.

Notes

Use ripe, freckled bananas for the best flavor.
