Easy Microwaveable Buckeye Fudge
Easy dreamy, rich and decadent Buckeye Fudge you can make in the microwave in a snap! Everyone loves chocolate and peanut butter! It's a win-win!

Peanut Butter Fudge Layer:
- 1 cup butter softened
- 1 cup creamy peanut butter
- 1 teaspoon vanilla
- 3 ½ cups powdered sugar
Chocolate Fudge Layer:
- 1 ½ cups milk chocolate chips or semi-sweet chocolate chips
- 1 tablespoon butter softened
- 7 ounces sweetened condensed milk (1/2 of a 14 ounce can of Eagle Brand Sweetened Condensed Milk)
Peanut Butter Fudge Layer:
In a microwave bowl, add the peanut butter, butter and vanilla and melt in the microwave for 90 seconds.
Stir to combine until smooth and creamy using a rubber spatula or wooden spoon.
Add the powdered sugar a cup at a time and stir to incorporate thoroughly.
Transfer mixture to the pan and press into the pan with your hands.
Chocolate Fudge Layer:
In a microwave bowl, melt the chocolate chips in 30 second increments until melted about a total of 1 minute to 1-1/2 minutes. Add in butter and sweetened condensed milk and stir until smooth and creamy.
Pour over the peanut butter fudge.
Let cool at room temperature at least 4 hours before cutting, or chill in the refrigerator for faster set up time.
Cut into bite size servings and store in an airtight container in the refrigerator for up to a week.
Set the fudge on the counter and let it warm at room temperature for a few minutes before slicing into bite-size pieces for nice even slices of fudge. Cutting it cold right out of the fridge; the layers may separate. :)
I used an 8" pan and cut in 48 pieces. Fudge was thick, which I prefer, but if you want a thinner fudge, use a 9" pan.
Double recipe to use the whole can of sweetened condensed milk.
