- ½ cup salted butter
- 1 cup creamy peanut butter
- 2 cups butterscotch chips 1 - 11 ounce package
- 4 cups miniature marshmallows you can add up to an extra cup of marshmallows if you want more marshmallow and less peanut butter/butterscotch fudge, I wouldn't recommend adding more.
Line an 8×8 baking pan with parchment paper.
In a large saucepan over medium heat melt the butter, the add the peanut butter and butterscotch chips stirring frequently. You can also combine the butter, peanut butter and butterscotch chips in a microwave-safe bowl and microwave in 30 second increments, reducing to 15 second increments until the mixture is melted and combined stirring between each increment.
Allow peanut butter/butterscotch mixture to cool 5 minutes, because you’ll risk melting the marshmallows.
Fold in miniature marshmallows and pour into your lined prepared pan.
Refrigerate for at least 1 hour before cutting into squares and serving.
