No Bake Peanut Butter Oatmeal Cups
Spray a muffin pan lightly with non-stick cooking spray. Set aside.
In a large mixing bowl, combine the peanut butter and maple syrup/honey/agave. Whisk until smooth.
Add in rolled oats. Mix together using a spatula or fork, until well combined.
The texture will be a little bit sticky. Add 2 – 3 tablespoons of milk if the dough is too dry or crumbly.
Divide oatmeal mixture into muffin cups. Press them down. Add some salted roasted peanuts on top if desired for a crunchy nutty factor. Time to coat the cups with divine chocolate!
Chocolate Peanut Butter Topping & Finishing Touches
Melt the dark chocolate with 2 tablespoons of peanut butter.
Spoon and spread the melted chocolate mixture on top of the peanut butter oatmeal mixture.
Sprinkle extra sea salt or some salted roasted peanuts on top if desired.
Freeze the cups for at least 30 minutes. Pop them peanut butter oat bites out of the muffin tray. Enjoy!
