Healthy Date Turtle Bars

Healthy date turtle bars layered with soft Medjool dates, peanut butter, pecans, and dark chocolate. Naturally sweetened, easy to make, and a wholesome twist on classic turtle candy.

Ingredients

  • 12 to 15 Medjool dates pitted
  • ½ cup peanut butter more for thicker layer
  • 1 cup pecans
  • 1 ½ cups dark chocolate chips or chopped chocolate adjust to taste
  • Optional: flaky sea salt

Instructions

  • Line a 9x5 loaf pan with parchment paper. Press pitted dates flat into the bottom in a single layer.
  • Warm peanut butter for 15–20 seconds in the microwave. Spread evenly over the dates.
  • Scatter pecans evenly over the peanut butter.
  • Melt chocolate in 30 second intervals until smooth. Pour over pecans and spread to cover.
  • Chill in the refrigerator for 10–15 minutes until firm.
  • Lift out by the parchment and cut into bars. Sprinkle with sea salt if desired.

Notes

  • Medjool dates give the best soft, caramel-like base.
  • Toast pecans lightly for extra flavor before layering.
  • Use almond butter, cashew butter, or sunflower seed butter as swaps.
  • Store in the refrigerator up to 1 week.
  • Freeze up to 2 months. Thaw at room temperature for 15–20 minutes before serving.
